Tree of Perception is a bourbon barrel-aged Barleywine that underwent a secondary rest on Amburana wood. This Southern Hemisphere sweet wood imparts unbelievably rich aromas of cinnamon cookies, vanilla bean syrup, and spiced butterscotch caramels. Underneath this introduction are robust notes of toffee, dark fruit, and warming oak imparted from its 27-month rest in select bourbon barrels. A final addition of orange peel slowly reveals itself, adding a subtle brightness to this rich offering. This eclectic release is the product of foresight and intention, each layer within its journey uncovered as it warms in the glass.
