The resulting beer is complex, but crushable; a very lightly tart beer with a herbal, fruity nose with funky notes of a mixed culture fermentation and a very dry finish, more interesting than a young saison, but more drinkable than a typical sour.
Ingredients: Water, barley, wheat, rye, kamut, buckwheat, triticale, spelt, hops, yeast, crab apple juice, quince juice.

750 ml bottle. Pours a dull gold with light head. Aromas of soft Brett, sulphur, lemons, white pepper and soft wheaty malts. Flavors bring out more Brett and citrus and maybe some of that quince. Nice.

220ml at the brewery shared with wife on Father's Day.
Aroma: awesome mix of Brett and wood, nice farmhousy notes.
Taste: along the same lines, nicely balanced Brett and funk.
Overall: not the most complex from them, but it's good one.

Pale, hazy. Tart, bretty and refreshing. Lemony, juicy, good complexity. Always tasty.

On tap at Dageraad. Pours clear blonde with a slight haze and a white head. Lots of brett and rustic yeast on the nose; fairly clean and dry. Flavour has tons of brett, nice rustic base, very buggy, and a touch sour. Nice level of carbonation. This comes together very nicely.

On tap at Dageraad, pours a clear blonde with a small white head. Aroma has plenty of bretty funk, lots of rustic saison yeast, oak, and a touch of tartness. Flavour is a big brett bomb, with lots of rustic saison yeast, tons of bugs, oak, and a touch of tartness. Complex yeast profile, finishing dry and lightly tart. Excellent.
