Unapologetic in name, tartness, and funk. The OG of smol batch and our very first commercial batch ever. 100% crab apples from SLO Creek Farm (varietal is unknown, though we suspect it is Dolgo Crab) makes an earthy, tart, full-bodied cider with a funk we know and love from sour beer, Basque ciders, and Rhone varietal wines.

Bottle from Press. Purchased because crab apples are great or because the label is awesome? Mojito glass @home. Purty cherry juice amber, just a little jellied & not exactly clear, but close. Hushed pale pink head in no hurry to dip. Potent earthy agriculture, cherry pumice & barnyard nose. Tart, sour cherry & lime. Cherry pit, big apple skin astringency, some bigger moments of barnyard that air out. Lingering rose water & a clean, seriously crabby-tart popsicle stick finish. Lingering sulfites. Sizzly carb, thin, nice acid, a touch textured, on point abv. Very tasty, but it's kinda farmy & funked up till it settles down.
