La Bonté is open fermented with our house Brettanomyces strains. The beer is then blended with a portion of Blonde Sour and onto a half pound per gallon of French Pears. Then we age the beer in bottles until it reaches perfection.

Bottle @ home, thanks to jcnielsen for sharing. Pours a milky, yellow-orange appearance with a white head. Aroma has lemon, fresh oak, light apple, guava, vanilla, light cheese, and some funk. Nice mouth feel. Bubbly and refreshing. Somewhat tart. Straw/hay, grass, lots of funk, light cheese, white wine / apple flavor. Not super flavorful but pretty good.

Sample at the brewpub. Hazy yellow-gold color with a medium white head that diminishes steadily. Partial rings of lacing on the glass. Fruity aroma with some oak and malt notes. Medium-bodied with flavors of tart pears, oak, malt and spice. The finish is mildly sour with a citrus and pear aftertaste. Pretty good all around.

Bottle at the Funkatorium, shared with innocent bystanders. Hazy to cloudy yellow color, fluffy white head. Aroma of subtle stone fruit, light dust. Taste has pear, attic, barnyard, lemon. OK.
