Brewed with heaps of chocolate malt, cacao nibs, and local, late season red raspberries from Agriberry Farm, Hardywood Raspberry Stout captures the essence of a decadent raspberry truffle in liquid form. A beguiling ale, this stout’s enticing cocoa aromatics build to a flavorful crescendo of full bodied dark chocolate, subsiding with a pleasantly sweet, tart raspberry jam laced finish. Pilot batch at 9.3% and 55 IBU.

500 ml bottle into snifter, bottled on 11/21/2017. Pours opaque dark brown/black color with a 2 finger fairly dense and rocky tan head with fantastic retention, that reduces to a nice cap that lasts. Thick foamy lacing clings on the glass, with a fair amount of streaming carbonation. Fantastic appearance. Aromas of big juicy/tart/tangy red raspberries, fruit skin/seeds, milk/dark chocolate, cocoa, coffee, caramel, brown sugar, roasted nuts, toasted biscuit, and dark/brown bread/crust; with lighter notes of licorice, molasses, raisin, plum, prune, fig, date, smoke, charcoal, leather, tobacco, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Damn nice aromas with great balance and complexity of dark/black/roast/bready malts, raspberries, and light-moderate earthy hop/fruity yeast notes; with big strength. Taste of huge juicy/tart/tangy red raspberries, fruit skin/seeds, milk/dark chocolate, cocoa, coffee, caramel, brown sugar, roasted nuts, toasted biscuit, and dark/brown bread/crust; with lighter notes of licorice, molasses, raisin, plum, prune, fig, date, smoke, charcoal, leather, tobacco, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness. Light-moderate pine, herbal, grassy, peppery, roast, charred bitterness; and fruit tang/tartness on the finish. Lingering notes of tart/tangy red raspberries, fruit skin/seeds, milk/dark chocolate, cocoa, coffee, caramel, brown sugar, roasted nuts, toasted biscuit, dark/brown bread/crust, licorice, molasses, dark fruit, smoke, charcoal, leather, tobacco, herbal, grass, pepper, pine, and yeast/roast/toasted earthiness on the finish for a while. Fantastic complexity, robustness, and balance of dark/black/roast/bready malts, raspberries, and light-moderate earthy hop/fruity yeast flavors; with an awesome hop/char bitter/sweet, and fruit tang/tartness balance; with no puckering, acrid, astringent flavors after the finish. Light-moderate increasing dryness from lingering bitterness and tart/tangy fruit. Medium carbonation and medium-full body; with a very smooth, creamy, bready, grainy, sticky, chalky, acidic, tangy, tannic balanced mouthfeel that is great. Mild increasing warmth of 9.2% after the finish. Overall this is a fantastic fruited imperial stout. All around fantastic complexity, robustness, and balance of dark/black/roast/bready malts, raspberries, and light-moderate earthy hop/fruity yeast flavors; very smooth and easy to sip on with the moderately bitter/tart/tangy/drying finish. Nicely soft, and not overdone on fruit. Fantastic balance of juicy/jammy raspberries, and rich malt complexity; with great earthy hop presence, and restrained fruity yeast. Light residual sweetness with lingering dryness. A highly enjoyable offering, and outstanding style example.

750ml bottle. Jet black colour with slightly late awakening, average, thick, creamy, moderately lasting and lacing, tan head. Earthy, tart-ish raspberry aroma, chocolately, dark malty background, a touch of cocoa. Taste is sweet-ish and tart-ish fruity, notes of raspberry, chocolately dark malty basis, hints of milk chocolate and cocoa, some fruit acid, a sherbet touch, minimally sugary sweetness; well hidden acohol. Relatively light body, almost a bit watery, quite thin at least; minimally sticky palate. Slightly restricted, monothematic, but great in its selected domain.

Thick rich raspberry and rich dark chocolate cake. The raspberries really shine, full body. Rounded and rich. Good dessert beer

16th April 2018, at the monthly beer exchange in Chez Sophie, Shrewsbury. 500ml bottle from Paolo, cheers mate. Black bodied, tanned topping. Subtle raspberry hints in both the nose and flavour, both of which were dominated my chocolate malts; really enjoyed this.
