Made in collaboration with our friends at Burial Beer Company in Asheville, NC, Chêne des Fous (shen de-FOO), meaning “Oak of the Fools,” is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted American oak chains. Intense oak flavors are met with savory lemon and dried fruit notes from the sumac and a subtle stone fruit aroma.

Poured from the tap. Hazy golden orange with small white head. Apricot, oak, hint of vanilla, mild acidity, this has probably had a chance to sit for a while, quite nice.

375ml bottle thanks to Kenny. It pours hazy orangey - copper with a small fluffy white head. The aroma is tart, tangy, sour, juicy, funky, loads of dried apricot, peach, mango, persimmon, spice, herbal accents and oak. The taste is crisp, dry, tart, zingy, puckering, acidic hit, apricot, peach, nectarine, jammy, marmalade, lactic, sherbet, oak tannin, spice, herbal, earth and boozy warmth. Medium body and moderate foamy carbonation. Punchy, zingy and puckering.fun, but intense.
