Made in collaboration with our friends at Burial Beer Company in Asheville, NC, Chêne des Fous (shen de-FOO), meaning “Oak of the Fools,” is a blend of sour triple ales aged for up to 18 months in French oak barrels with dried sumac, fresh apricots and toasted American oak chains. Intense oak flavors are met with savory lemon and dried fruit notes from the sumac and a subtle stone fruit aroma.

From tap at BeerTemple, Amsterdam. A bit spicy with oak, apricot, ripe-ish fruits. Tart flavour with a medium sourness, somewhat puckering but not as acidic as most Cascade. More spicy oaky notes in the finish. Very nice.

Shared bottle at Mi2 at Cardinal 16.09.24. Clear straw colour. Excellent aroma and taste of acid, marmalade, brett. Astringent aftertaste.

Klår, ravfarga, lågt kvitt skum. Veldig aromatisk, marsipan, frukt, fermentert frukt. Smaken er fruktig og svært syrleg

I haven't had a Cascade in like 5 years. It's amusing that this is still so sour when it's a Triple (albeit with apricot and sumac). But that's their thing. RIP Cascade.

Amber. Slight haze. Thin head. Tart, fruity aroma. On the palate it'�s like this odd acetic yoghurt with rosemary.

On tap at Akkurat. (2018) Dark golden/amber with a minimal head. Sour with oak, mild apricot, vinegar and lemon. Really sour this one.

Fat på De Klomp, Linköping. 2018. Mörkare guld/bronsfärgad med vit krona. Fylligt, moget, mycket ek och trä, bra syra, djup. Vid detta laget spelar frukten mer support och är snyggt integrerad. Möjligen lite torkad aprikos. Mycket gott.

375 ml corked & caged bottle, vintage 2018, at Cardinal, Stavanger. ABV is 8.4%. Hazy orange colour, small white head. Complex aroma of brettanomyces, oak, lactic acid, sumac berries and apricots, spicy hints. Very sour flavour, with the same elements as the aroma.

Shared bottle at Cardinal, Stavanger. Pours clear light amber with very small head. Aroma of lemon, effervescent powder, white wine, herbs, ginger, a little ethanol. Taste sour lemon, complex and fresh. Medium bodied.

(Draught at Beer Temple, Amsterdam, 7 May 2022) Amber colour with foamy, off-white head. Fruity, sourish nose with notes of oak wood, vinegar, apricots and lemon. Fruity, tart taste with citrus, oak wood, vinegar, apricots and a dry and tart finish with low bitterness. Almost full body, quite dry. Really rich and tasty with a generous and refreshing acidity and a good fruit character. Yummy! Great beer!
