Barrel-blended Wild ale

A blend of Mills' spontaneous & our mixed-fermentation base beers, made featuring flaked spelt, aged hops, fresh Saaz & Kazbek. Aged in Scottish whiskey butt, French oak & ex Oliver’s Cider bourbon barrels for 2, 3 & 4 years.

Effervescence, Lemon balm & Stockbridge Arrow Rhubarb.

Thanks fonefan! Golden colour, small head. Aroma is vanilla, some fruity, nectary and mild tart wooden tones. Flavour is tart wood, mild floral, vanilla and some nutty tones to it.

Sample, thanks fonefan! Clear amber, small head. Tart nose with rhubarb and mild wood. Mildly citric with medium body and rounded, somewhat spritzy mouthfeel. Pinepple and rhubarb. Mid bitter finish.

From tap at Van Moll Fest 2025. Puckering sour with barrel notes, some vanilla from the barrel, lemon, oak, light funk. Dry and sour, finishes dry. Very nice.

375ml bottle. Almost clear golden, big white head. Aroma of lemony, orange citrus, Bretty funk, misc. barrels/oak. Taste has lots of sharp citrus, lemon, grapefruit, oaky barrels, Bretty funk, little bit of apple maybe, spritzy carbonation. Wild ales aren't my thing at all but this seemed really good.
