The closer you get to the center of rice, the more starch it contains, and the more non-starch components there are on the outside. We hold dear to our belief that sake is created by the blessings of heaven, earth, and people. Heaven refers to the water, earth refers to the rice, and people refers to the brewers. As the saying goes, the brewery uses underground water from Mt. Takanawa as its brewing water, and most of the raw material rice is grown in Ehime Prefecture, especially in the local Hojo area. We strive to brew sake without forgetting our gratitude for the environment we have been given. We respect everyone involved with Sakura Uzumaki and aim to continue growing together. We strive to make better sake, putting safety and security for our customers first.
