750 c&c from Half Time. Pours clear gold with a creamy/foamy white head. Aroma is lightly burnt citrus. A little sour in the aroma. Near full in body. Flavor is citrus, almost bergamot, with some sweetly earthy (?) aspects. It keeps promising sour, but never quite gets there. The flavor complexity is not great, but it is quite unusual. The mouthfeel is good, and it’s something of a cooked fruit tripel. Like it.

Location: 750 ml bottle from Buy Rite - Jersey City, 12/9/10
Aroma: The nose has some brown sugar, dark red fruits, a little orange, and holiday spices
Appearance: Pours a dark reddish-brown with a half finger of fluffy beige head and some lace
Flavor: The flavor is like the nose, it had lots of spicy and dark malt flavors
Palate: A medium bodied brew with slight warming feeling and fairly soft carbonation
Overall Impression: This is a decent winter beer. It has a good amount of spice to it, and it's kind of warm on the mouth, surprisingly so for a beer that's only 7.5%. Anyway, decent stuff.

Location: 750 ml bottle from Buy Rite - Jersey City, 10/30/10
Aroma: Nose has herbal hops, fruity notes, some floral notes, malts, and a little wood
Appearance: Sort of a dark golden-orange color with a large, fluffy white head
Flavor: The taste is sort of mineral/herbal, some malty flavors, and lemony/fruity notes
Palate: It has a sort of strange, but not necessarily off-putting mouthfeel to it
Overall Impression: I'm a big believer that it is always a good idea to kick-off a tailgate with atleast one "good" beer. If you are going to be drinking pale water from a can for the rest of the day, at least you got to try one thing with some flavor and color to it. Anyway, this was our kick-off to a day of tailgating, and it was solid stuff. It is a nice attempt at an English-style pale ale.

Location: Sampled at the NY Brewfest on Governor's Island, 6/19/10
Aroma: The nose is mostly toasted and cereal malts
Appearance: Pours a hazy, dark reddish color with a fluffy head
Flavor: The flavor is pretty good, a nice cereal/grain feel to it with just a touch of hops
Palate: The body drinks really nicely, with a solid mouthfeel
Overall Impression: Overall, I thought this was a pretty good beer. A nice looking amber beer with a good flavor and a nice mouthfeel. Solid and enjoyable. I liked both of the Defiant beers that I tried at the festival.

Aroma: The nose has some chocolate, roasted/dark malts, and some caramel
Appearance: Pours a solid brown color with a creamy tan head
Flavor: This is a medium sweet porter with a bit of a hop kick in the finish
Palate: The body is almost creamy, but with more carbonation then a normal creamy porter
Overall Impression: This one tastes pretty good. It has a pretty good fell to it, and it drinks pretty nicely. My first beer from Defiant Brewing Company, and I enjoyed it quite a bit. I would drink this one again.

Clear golden coloured body with a hazy look and a nice sized white head (from natural carbonation & bottle fermentation) with a bunch of small bubbles rising from the bottom. Aroma of bananas, yeast, bread, wheat and a bunch of spices. Medium-bodied; Assertive spiciness in the taste with coriander seed, curacao and some allspice in the mix. Aftertaste is pleasant and not as strong as most other tripels. Good on the spice, good on the sweetness and a well-brewed beer that shows well for the brewery as a whole. Overall, nice to try and looking for more from the producer! I sampled this 75 cL bottle purchased from Liquor Outlet in Boonton, New Jersey on 14-March-2010, sampled at home in Washington on 21-March-2010.
