Bottled. A pale yellow mead. The aroma has notes of honey and some spices. The flavor is very sweet with a light acidity and notes of honey and spices, leading to a sweet but lihtly tart finish.

Bottle 75 cl. Courtesy of Ungstrup. Pours a very pale yellow. Tart and sophisticated honey aroma with some present alcohol. Medium body, sweet and flowery honey accents, spicy with a tart and almost astringent finish. 280710

3 years old, tasted in parallel with the 6 years old (Vieillissement Prolongé)
Pale blond color. Honey aroma, floreal. Sweet but not syrupy, the body is lean; with a very pleasant acidity to balance the sweetness, with jasmin flower touch, reminding fresh ginger too, with a ginger bite in the end too. Less complex than the 6 years old, but very good.

Pale blond color. Less honey aroma than the 3 years old, light wood, white wine. Mellower flavor, sweet but not syrupy, with a light and interesting wood and sweet nut touch, stronger touch of sweet flowers, jasmin; with the extra ageing the acidic character is almost gone, but the woodyness manages to balance the sweetness. Balanced and long final, with notes of apple juice, and very light wood astringency. Complex and excellent.
