Description
We are a small scale company making cyder and perry following the heritage of traditional methods with a bit of 21st century know-how to ensure a quality product is created. We pick fruit from unsprayed orchards and do not press the fruit until we think it is fully ripe. My fruit is mainly sourced from Monmouthshire and Powys but I sometimes stray over the border into Herefordshire and Gloucestershire to get fruit for the blends I want. The cyder shed and equipment used to make the cyder has been largely made by myself and each year I reinvest in something new to enhance the cyder making process.
We only ferment freshly pressed apple/pear juice and rely on the naturally occurring yeasts from the fruit to create unique flavours. Our cyder and perry change from year to year. The beauty of craft cyder making is you never know what you are going to end up with. It is not like the industrially produced cider that is the same each year.

Sampled @ GBBF day 3. Hazy pale yellow color, it does indeed look like pear juice, no head. Aroma is pear and sweetness, taste is pear and lightly sour. Decent body, medium dry finish.

Hand bottle at Pat’s Birthday Tasting, London. Pours lightly hazy gold. Sweet, sugary apple nose. Light sweet flavor, musty, dry. Light bodied with fine carbonation. Dry finish with modest apple character and understated sweetness. Decent cider.

Handbottle @ chriso.Clear medium to dark orange colour with virtually no head. Aroma is moderate to light heavy apple, tart apples, wood, honey notes. Flavour is moderate to light light heavy sweet and light light acidic with a average to long duration, dry, apples, honey, green apples. Body is medium, texture is oily, carbonation is flat. Hand bottled at chriso’s. Hazy golden, no head. Mid sweet with soft mouthfeel and medium body. Leathery ripe apple aroma. Mild and soft with some apples skin bitterness. Quite nice.

Handbottled@Chriso. Orange colour, minor head. Aroma is apples, herbs, vanilla and some slight fruityness. Flavour is apples, vanilla, some mild riped fruits along with a mild sourish and tart wooden tone to it. Balanced.

Cask@GWBCF2011. Orangeish golden colour with no head. Aroma is sour apples, mild wooden notes, some smooth yeast and cheesy notes. Flavour s much the same. Pleasant sweetish sour apples mixed with some mild vanilla notes on the finish.

Cask@GWBCF2011. Yellow colour with no head. Aroma is yeasty, mild rotten riped apples with some slight earthy notes. Flavour is riped apples along with some sour apples as well as wood, herbs and quite much earthy notes. A bit watery in the palate.
