50 cL bottle. Pours clear and golden yellow with a fully gone head. Aroma is mild wooden and floral. Sweet, fruity and honey flavoured. Mild dryness from back of the tongue. Mild phenlic into a fruity dry finish.

50 cL bottle. Pours clear golden orange with a fully gone head. Aroma is floral and fruity, slight chemical. Sweet sugarish flavoured. Sweet and floral into a lasting and tasty finish.

Bottle 50 cl. Courtesy of fiulijn. Pours a clear, warm golden. Very spicy aroma, very flowery and pollen-like, but also herbal - thyme and oregano. Rich body, thick and syrupy honey, the spices are less prominent on the palate. Ends with a very warming alcohol. Interesting indeed. 100810

Dark amber colour, unclear. The aroma is definitively oxidized, maybe more than the equally old demi-sec, with notes of wax, fruits, soil. Sweet, bold, but not sticky; fermented honey, chestnut honey, caramelized sugars; pleasant alcohol; mild signs of oxidation.
Very good.
2010-07-31, bottle, as Cuvée de l'Olympe, 7-4-7-3-15=36
Golden-yellow color, the darker among the three Cuvées (with Médievale and Celte). Honey aroma, more intense than in the Cuvée Celte, with a earthy touch too, moss. Very sweet mead, clearly more than the other two Cuvée; the honey flavor is a bit more complex; there is an accent of fresh wood and pine honey, lightly spicy too; with this sweet body, the alcohol complements better than in the others; and this one as well has a light acidity. Very good.

2024-04-24, synthetic corked bottle, bought 14 years ago at Le Comptoir du Terroir (Paris), 7-5-7-3-14=36
Bright gold/copper colour. Aroma of malt, wood, mild oxidation, alcohol. It's off-dry, with old honey flavour, wood, moderate oxidation, more evident in the finish, and warm alcohol. Too old, but interesting, some Sherry-like qualities.

Yellow color. Nice aroma of acacia honey, mild. Sweet mead, with a good honey flavor, mature, round. The final shows a bit of alcohol and a light complementary sourness. Pleasant, without excitement.

Yellow color, paler than the other two Cuvées (Celte and Olympe). Light honey aroma, but also some chemicals, phenol (very light). Semi-sweet mead, with simple flavor, some honey flavor, very light vinous sourness, and the final has some bitterness. Ordinary mead.
