Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Don’t know how long this bottle hovered in back of the liquor store cooler in Clinton, NJ, but it doesn’t have the current label...
Whoa! Big horsey smell when I finally got the slightly moldy cork out of the bottle. Kicked up a big foamy head when I poured it, that quickly subsided as I set up some crackers and blue cheese. Appearance is just like a pilsner, yet somehow more pleasing. That original smell went away, too. Taste combines aspects of a dry champagne and a sour grape juice. Sourness is not distracting, rather, allows more subtle traces of fruits. Can’t pick up too much malts or hops, but color is like a good French farmhouse ale. Yeast dregs on bottom add extra note of grape skin tannins.

2001 Bottle at the Art of Beer Fest 2004. Pours a magnificent bright goldenrod, with red tinges, and dark brilliant oranges. Like polished copper. No head, but some wisps of lacing on the edges. Aroma is intense and incredible (as usual from this brewery). Cider vinegar, oak, cedar, huge sour yeastiness, salt, sugar and maybe a hint of light molasses. Aroma is so superb and full it really sets my expectations high (as if they werent high enough already). Upon first sip, I think two things right away. 1) This is really good, authentic tasting lambic that is neither too sour/dry. 2) Wow, this body is very loose and lightly watery. Perhaps the age of it creates a lot thinner mouthfeel, but that’s what it seemed. As far as the flavor though, it paralleled the aroma quite well. Deep apple cider meets belgian yeast and oak. This is the best oak flavor I’ve tasted in a beer. Lots of light fruit esters, good lingering sourness on the finish, quite cheesy at the end as well, though in a sweetish/sour sort of way. Wow this was intersting stuff. I just wish the body would have held up better. I can hardly wait to try the bottle in my cellar and rerate. 10/5/8/4/16 2003 bottle While I don’t hold it against the beer for being flat, as that’s to style, this particular vintage seemed very underwhelming. Much looser body than the older vintage I had (strange) with less oily, oaky complexities. Yeast sourness is still present, of course, but the usual funky, cheesy nuances of Cantillon’s lambics seem less accentuated here. Still, I give them credit for bottling a style that is not terribly suited to the bottle. 8/5/7/3/14 On draught at Redbones, 4/14/05!!! Wow, to say I was excited to try draught unblended lambic is a vast understatement. Being somewhat disappointed by the 2003 bottle, I wasnt sure how it would be. However, this was superb. Flat, yet not lifeless, there is a slight tingling sensation as you drink the beer. The aroma was full of brett, citrus, lemon sorbet and rich, well-oiled leather. Flavor is a mountain of brett, more oily leather tannins, with lightly sweet malt, sweet apples and sour, yet tantalizing bacterial nuances. Too bad the keg only lasted a couple of days. . .9/5/8/5/18 2014 cork date 750mL bottle shared by Willrunforbeer on 10/19/24. Not too sour! Woody, tea-like. Citrusy. Souch Chinese tea character. Soft, malty, wheat slick. Beyond complex. Lots of umami. The essence of Lambic. If you don't love this beer, you don't love lambic.

Bottled (1998). Hazy deep golden. Citric nose. Nearly flat, but still with pleasant light, sparkling mouthfeel. Juicuy and concentrated. Barnyrady and woody. Soft and dense malt character. What a brilliant mistake this beer is!

an unclear orange beer with no head. The aroma is sour with notes of wood and peaches. The flavor is lovely sour with notes of grapefruit and a dry finish. A lovely beer.

Cloudy orange color, medium white head. Typical gueuze aroma, but a bit weaker and more sweet. Taste is sweet gueuze sour, hint of dishwash. As jerohen said, there are better gueuzes out there. Nevertheless a nice beer to complete my first millenium!

1998 375mL bottle sampled 3/24/04 Kick ass, a 6 year old lambic! Wonderful light pink, like a blush wine yet hazier. As more sediment gets mixed in, it darkens in to a muddy cherry-brown. A good bubbly off-white head perches atop throughout. Immediately upon decorking, it smells of sulfur!!! Interesting. Quickly develops in to some dry band-aid phenols, some light tart cherries and a big yeast kick. Vinegar and fruitiness not dominant in the smell. The cherries allow for huge complexity in the nose, combining fruit esters and acid with the normal funkiness of cantillon products. Amazingly dry, but even more amazing, is the medium-full body. For something so dry, tart and seemingly light, this has a wonderful chewy mouthfeel and big flavors. Yeast is huge, and the cherries are there, but it is a complement to the gueze-like flavors, not the main show. Tart, no artificial/syrupy flavors, and wonderfully complex. Blue cheese on the finish, and a big bite of balsamic vinegar. The flavors just wrap around your palate and stick in a delightfully flavorful way. Cracked, old dry leather comes to mind. I wish I had tried more lambics before sampling this, and I will admit to it being extremely dry, but still, it’s so much better than sugary, syrupy and cloying. This stuff just screams with quality and in all, I didn’t find it too dry. Definitely a big fan of cantillon after trying this. Can’t wait to try the lou pepe kriek.
2003 bottle Wonderful color and head retention, but much less puckering than remembered. I need to have more will-power to hold on to these things longer.
On draught, July 2005 at Redbones. Chalk up one more draught Cantillon experience. And a fantastic one at that. Beautiful color and aroma, even in a bar, with boisterous cherries deliciously confronted with sour bacteria and light wood notes. Must have just been put on because it was tremendously fresh, with no thinning/oxidation whatsoever. Light cherries mingle with dry wood, heavy horseblanket and a distinct and crisp sourness, very refreshing and drinkable. I had 3 glasses it was so good!

Been a while since I’ve had this one and it’s every bit as delightful as remembered. Stiff acidity but still overall fairly mellow. Cherry flavor is pure bliss, with a superb mix of critter and yeast notes. Very light wood. Same perfect texture as remembered; tight, engaging carbonation. Having had some less than exciting samples of fou foune and RdG, it’s nice to see this one still lovely as ever.

The aroma is moderately funky. The carbonation is low; there is some mellow atitude; mderately acidic, with a touch of funk; there's some undefined fruity character; orange peel.
Good, but underwhelming.

Cloudy blond colour with a hint of orange. It's much more acidic than the older sample tasted 3 days ago, lemony, with just hints of Lambic character, astringent in the finish.
Good but I'll still go for older bottles.

Cloudy deep blond color, with generous head, reducing to a thin but persistent layer. The aroma is mild, with light malt, sweetness, fruits. Smooth mouthfeel; there is a pleasant combination of Lambic with light fruits, and a citrusy character. Dry finish with mild astringency. Pleasant.

Golden color, fizzy. Subtle gueuze aroma, carbonic, a bit woody, young (!), no fruits. Sour, but thin mouthfeel; classic Cantillon character.

[Vintage 1999] The aroma is sweet and sour with notes of cherries and grapes. The color is an unclear deep red and it has a fine pink head though disappearing. The flavor is sour with strong grape notes and acid from the wild fermentation. It ends on a woody dryness. This beer has a lovely flavor.

[2001 Vintage] An unclear very red beer with a small delicate head. The aroma is sweet and strong in cherries. The flavor is dominated by cherries on a good sour background. This is a really good kriek. [Thanks to Joris and Jacob, I have been so fortunate to sample the predecessor of this, brewed to Hopduivel, vintage 1991, sampled 2005: A red beer with a disappearing pink head. The aroma is somewhat faint, but clearly of cherries. While the flavor is just fantastic, a nice dry woody cherry flavor, with lots of power. A delightful beer. 7/4/8/4/16]
