"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Fully hazy yellow straw with little whitish rim. Fries, burnt esters, Brettanomyces, grapes, dry and perfumed soap, vanilla. Fresh, titillating & absolutely mindblowing fine fruit taste, grapes, wild berries, brambles; dry finish with lemon and lemonpeel. Light but slick MFwith a refreshing, reviving throatfeel. The alcohol is absolutely hidden under all the fine, but powerful flavours. Something to wake up the dead - nobody wants to be dead anyway when he/she could drink this.

Pours a flat, cloudy golden color - musty and almost "musky" aroma, along with white wine, wheat, aged cheese - the three years in oak have given an extreme woody flavor to the beer - light bodied - only moderate sourness - wheat flavors, white grapes - funky, cheese-like brett flavors near the finish - oak remains throughout - a little thin, but interesting.

Straw-gold to peach colour, hazy; no head. Pure grapefruit nose, C-hops, natural fruitiness of the hops reinforced by the lambic. Faint classic hops aroma. Mindblowing blend of young lambic sugars, sour lactic acid, wood, turpentine and pure C-hops flavour. Old books, incense. Light, refreshing and tart drink. WOW! This is revolutionary! More of this, Jean!

[re-rate: had the remainder of the bottle with a meal today, and I enjoyed it a lot more - the tannic qualities and driness served as good palate cleansers and really enhanced the taste of the food - also, with my palate alternating between the flavors of the food and the beer, it seemed much less over the top/intense - this is really wonderful stuff] Dark, purple/red color with minimal carbonation, therefore minimal lace - very "wild" aroma, with brett funk/cheesiness in abundance, along with huge amounts of oak, cherries, barnyard/earth/mustiness - very tart and extremely dry, giving it wine-like character without it actually tasting like wine (if that makes sense) - the funk is all over this (I wish I’d remember to buy cheese to have with this) - woodiness, sour cherries - I’ve been liking the sour beers lately, but this may be a bit too much for me.

Hazy dark golden color with a fully diminishing very thin white head. Very tart aroma. Somewhat thin flavor but a nice sour flavor somewhat similar to lemonade without the sugar.

Courtesy of Kinz. Bottle 163/168. Golden color with a creamy white head. Fruity aroma, while somewhat sour. Very tart flavor with a fruity back.

2001 bottle. Pours a hazy golden/orange colour with a white head. Barnyard aroma with hints of citrus. Flavor is malty with a nice sourness. Hints of citrus with a long sour finish.

Bottle: Poured a medium red color lambic with a huge bubbly head with average retention. Aroma is sour with some touch of sweetness. Taste is quite a surprise with less acidity then I would have expected from Cantillon with a nice balance between the grapes and the lambic. Carbonation is quite strong and body is quite light. Well balance tart and sweetness with the grapes less dominant then expected. Probably one of the only Cantillon that I wouldn’t mind drinking a whole 750ml by myself on a hot summer day.

Bottle. Golden pink color with no head. Tart raspberry and barnyard aroma - not very sweet. Tart, funky flavor that leaves a bit of fruity raspberry on the tongue. Slightly less body than expected.

Bottled. Very reddish colour with some amber hints, almost no head. While pouring sweet strawberry/raspberry mixed aroma, with the Cantillonish-bitter-sour notes coming after it is in the glass. Strong Cantillonish lambicflavour. Aftertaste has some weak fruity and berryish hints, but as usual the sourness/bitterness covers it up pretty much. Some wineish hints also.
