Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle at London Gathering Nov 05. Cloudy gold colour with no head. Quite a good nose. Really sour but also some nice fruit too. I thought that I had got this beer wrong as my original notes say "sweet acidity," which makes no logical sense. However, having mulled this over with Silk, we agreed that it does have a sweet and sour mix going on in the mouth. Some stewed apple/lemon flavour. Bit of farmyard funk on the nose. Good pure lemon juice finish. 4.3/5 Bottle at brewery. Hazy gold, ring of white bubbles, woody cognac toffee aroma, Earty on aorma, you can still smell the barrel. Wow, the cognac adds a touch of sweetness. Nougat on aroma. Like a dry dessert wine. Wow, speechless, I am without speech.

Bottled. Reddish clear with no head. Sour, mouldy aroma. Sweet and sour flavor with fruityness in the back. Crisp and dry finish. Rating: 6-3-5-3-15-3.2. (051028)

Bottle, 37.5cl. 2005 vintage. It pours a semi-clear orange-golden body, topped by a cute, white head with some pinkish notes. Sediments in the bottle. It’s horsey and barnyardish on the nose, with a cheese-like touch and some berries in the back. Some lemon-like and slightly mould scents too. Tart and puckering in the mouth, with a fine citric touch. Medium body, maybe a bit watery. Cheese notes, horseblanket, super-sour berries, lemon juice and a touch of old, soaked wood in the flavor. Lasting astringent, lemony finish with a distinct flavor of berries. A nice teeth-cleansing beer bearing the age well. Yummy. (090111)

Bottled. Yellow-white hazy beer with a small white head. Aroma is green apples, old cellar and fruity acids. Dry, sour, astringent and delicious. Shared it with some lager-friends, and even they sort of liked it. Rating: 8-4-8-3-15-3.8. 051028

Bottle, 75cl. Bottled 20090213. It pours and unclear yellow-golden body with lots of carbonation. Rather small head, firm and lasting, even some lacings. Citrusy, light barnyard aroma with green apples and some mouldy old cellar. It’s puckering in the mouth, well carbonated and medium bodied. Lots of acidity, lemon and unripe apples, some funky cellarish barnyard flavors, but not very much. Quite medicinal too, at least much more than in the last two bottles I’ve had. Lasting finish with acidity and citrus peel. A quite fantastic beer, and what’s even more fantastic is that it’s available all over Norway. Who would have though that three years ago. 110109

[At RBSG 2005] An unclear orange beer with a disappearing white head. The aroma has notes of grapefruit and lemon, giving it a slight sourness. The flavor has a great sourness with lots of grapefruit, while the mouthfeel is very smooth - reminds me of whipped cream. I can’t pick up the cranberries - and find it with less character as most of the other Cantillons - so I was disappointed, but it is still a good beer.

Bottled. Apricotty orange colour, no head. Cantillonish sourness in aroma with weak hints of grape. Sourness and grape on flavour. (7 2 7 3 11).

Bottled. Hazy orange colour with almost non-existant head. Aroma is sour wood, with vanilla and some whitewineish notes. Flavour is much the same along with some sour berries added. Excellently balanced. 8 3 8 5 16.

1979 vintage, Kulminator. Clear orange color. Aroma of raspberry, some cask wood. Quite smooth taste, only some raspberry. Quite tart, but not as tart and jaw-breaking as many other cantillons.

Slightly cloudy orange color. Head is initially large and sparkling like cola, but dies immediately to a short lasting head. Sparkling body. Aroma is oak-casked lambic, white wine like. Taste is tart gueuze, but also a bit sweet and fruity. Sticky palate. Although this is classified as a lambic-fruit, i would better fit in the lambic-gueuze category IMO.

Bottle at RBG Low Countries 2005 - 1979 Vintage - Thanks to Carlo and Jeppe for the sip.
Clear, orange body. Looks just like a mead. Smells like cask wood, white wine, raspberries, apples, old beer. Heavily acidic initial flavour. Moderately acidic finish. Oily texture. Quite lively for it’s age. It was a very aged sample and in terms of smoothness of the beer it was like drinking cognac (not in terms it’s flavour). Very lovely beer, which was older than myself.

Sour aroma, with an overwelming presence of rasp-berries. Rose colour, as all the Cantillon beers (which I have drunk sofar) it has no head and a lot of bubbles. The flavour is a little bit sour, but because of the rasp-berries I think there's a loss of flavour (rasp-berries don't have a rich and complex flavour, so I think the rasp-berries diminish the quality of the Cantillon-lambic. A little bit disappointing

Bottle from Utobeer. Deep cherry colur with no head. Very sour lactic nose, no noticeable malt to balance. Sour cherries as well as iced cherries as daniel brown described it. Very sour and acidic in mouth. More of an experience than a beer really. Finish has cherries which are sour and acidic. I prefer Liefmans or kriek fantastyck. Re rate. Craft Clerkenwell tap lovely rich cherry aroma superb taste.
