Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle at Holy Grale. Sampled from the tap at Holy Graile. Pours a slightly hazy light red with a pink hue and a white head that dissipates to the edges quickly. Aroma has a great herbal funk with a touch of light tart fruits coming through. Flavor is more herbal and funky with only a hint of tartness in the finish.

Mostly clear deep straw color with a good sized bubbly white head that persists. Earthy funky nose and flavor with light vinous notes. Decent bready backbone. Very nice.

Sampled at Hop On Hop Off Festival, Breda, 2026. Bright "ranja" appearance, small to average sized pinkish head. Aroma is barnyard and hay with a soft red fruit hint. Flavor is similar. Very pleasant. Lovely beer. 8-8-8-8-8

Bottle. Color: Pale yellow-ish golden, white head. Aroma: Grape, funky. Taste: White grape, grapeskin, rural funk. Hints of horse stable. Moderate tartness. Some stone fruit. Some tannins, but somehow not as much as I expected. Clean, refreshing. Nice beer-wine hybrid.

Excellent. Quite smooth, mild grape, slight metallic, mellow acidity, great. The balance is really outstanding. A little tannic quenching, subtle woody notes. Nips of berry and rounded grape. Delicious.

Bottle at home. Clear golden with white head. Peach, apricot, soft funk, vanilla, sweet malts, light sour stone fruits cut through. Almost full bodied, carbonation is a bit on the suntle side. Lovely really.

Bottle, with Brandt (thx!), Gurthnar, Zhenya, and Valhalla folks. Hazy golden body. Ginormous, beautiful apricot and oak in the aroma, some brett. Just lovely, juicy, apricot-driven, mildly woody, low acidity, lightly lactic in a good way, lemony tartness... Oh man... ooooh man... My favorite Cantillon, upgraded. How does it work this well, how?!

2017 bottle. Thin bod, light carbo. Highish sour, but surprisingly leaning heavily into lacto, with only relatively very light acetic and other acids. Quite citrusy citric feeling, even more so than the med-light barnyard. Interesting development here.
