Open the door of the 56 rue Gheude.
Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.

"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.

Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.

Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

On tap at Moeder Fountains for Quintessence Weekend. Clear golden pour with a white head. Mellow funk and barrel bouquet. Taste is eloquent with sour lemon zest and citrus up front that give way to malts and cereal. Good body, good complexity, and good mouthfeel.

Bottled 28.2.2024. Thin body, med carbo. Med-light sour, soft feeling, light tart with a hint of acetic. Lots of pleasant sweaty horse, barnyard, very funkin good. Hint of grapefruit, zestiness, some grass too. This is what these beers are sipposed to be.

0,375l bottle from Drikbeer Advent calendar, #12. Vintage 2023. Hazy purple red beer with quite small, quickly vanishing pink head. Lively carbon. Aroma is sour notes and blueberries. Flavor follows, earthy and tart. I know this is very special hype beer but not my cup of tea.

Slightly less satisfying than the 2025 I just opened. We were gonna drink this for dessert but my friends' kids got in the way. I had to drink it all by myself, what a pity 😉

Bottle.

A- Golden orange color, clear liquid, no head.

A- Dusty, light lemon peel, farm air, light, wet straw.

F- Lemon verbena, rubber tire, barnyard hay, wet oak, slightly funky.

T- Light body, average texture, average carbonation, complex finish.

O- 2015 vintage drank at 10 years of age. What else to say other than a classic. The standard. I wish I could have this all the time and try at 20 different vintages to compare as you know it would be a lovely new treat each time. Just great.

Bottle at home. Reddish brown color, average sized off-white to beige head. Aroma and flavor are nicely fruity, soft tart notes, red fruit, grapes. Very well balanced. Lovely beer again by Cantillon!

75cl bottle @ Tim's place, Gent. Pours a deep hazed purple, solitary bubbles atop attempting to form an alliance. Aroma of grape mush. Characterful grape presence, quite vinous overall with a measured sour air, woody nods in the background, quite a fruity affair, gentle bitter caress. Nice.

Mild säuerlicher, weich beeriger Beginn. Trauben, süß-säuerlich, spritzig, hohe Süffigkeit. Spritzig bleibend, mittellanger Abgang, nett. 10/11/10/10//10
