Open the door of the 56 rue Gheude.
Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

750 ml bottle. Pours deep berry red to purple with dissipating pink bubbles. Sharp raspberry, milder blueberry, vanilla hints, lacto. Taste: moderate sharp, sour red berry fruits, vanilla apparent but not overpowering. Dry on the palate. Medium body with spritzy carbonation. I'm sure some conoisseurs turn theit nose up at this pastry lambic, but I like it's quirkiness

26/IX/25 - 75cl bottle from Cantillon brewery @ my Brewfist Italian night (home), BB: 17/II/35, bottled: 17/II/25 (2025-939) Thanks to Didier for sharing the bottle!
Little cloudy orange blond beer, creamy yellowish head, stable, a bit adhesive. Aroma: earthy, a bit floral, some elder flowers, a bit leathery, herbal notes, lots of rhubarb, acidic impression. MF: ok carbon, medium body. Taste: lots and lots of rhubarb up front, oxalic acid, a bit lemony, very earthy, leathery, a little bitter. Aftertaste: nice, lots and lots of rhubarb, pleasant acidity, good stuff!

Bouteille 75cl de et partagée avec Tderoeck & Didier, merci Didier @ Tim's Brewfist Italian night.
Pâle dorée, col blanc persistant.
Reste de très belle facture avec un apport de rhubarbe qui sublime les lambics - cela tranche avec deux acidités qui se prêtent bien au jeu - une végétale et une de la fermentation.
Effervescence reste assez haute ce qui pour moi aide à sublimer la rhubarbe et son côté finement terreux-acide/amer.

From Amstein, opening it tonight after the Fred'visit, busy day and for me, it was a good gueuze, better than the Timmermann version, really smooth, fruity, subtle touch of apricot, fresh cereal, a bit sour, some sweetness, good job.
