Cantillon ? That’s the time machine. You’ll leave the modern civilization, goodbye to the noise, goodbye to the world.
"But where are we ?", you will ask yourself.
Well, you are in a family brewery where Lambic, Gueuze, Faro and Kriek are made and where nothing has changed since 1900 when it was founded. The Van Roy-Cantillon family welcomes you and invites you to discover a fabulous world. Beers, tools and brewing process are still the same as in the beginning.
Red copper containers, barrels, some of them more than 100 years old, and walls of bottles constitute the scenery for your visit.
Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer. Maybe you’ll be lucky to see the brewing or the bottling, maybe you ’ll see how barrels are cleaned or how fruit beers are made in summer.
Anyway, you’ll be able to taste a real traditional Gueuze-Lambic and if you would like to know more about the Kriek or the Framboise, just ask the brewer.

Bottle Saison 2016-2017. bottled 27 january 2020. Color: Slightly hazy golden, white head. Aroma: Fruity, bit vinuous, berries, tartness, funky. Taste: Farmyard funk, oak, tannins, fruity notes of citrus, berries, some bread, moderate tartness but also some vanille-like sweetness and a little bitterness. Dry-ish mouthfeel. Medium body. No carbonation. Nice complexity. Very nice.

Bottle. Bottled 16 november 2022. Color: Clear golden, white head. Aroma: Sour-ish, funk, fruity. Taste: Smooth mouthfeel, over moderate tartness. Notes of wild yeast funk, fruity berries, citrus fruit, unripe grapes, green apples and oak wood. Hints of hay. Dry-ish mouthfeel. Medium body, below average carbonation. Nice.

Aus der Flasche (bottled 18.11.2024/bbe 18.11.2035) im 2025-08 getrunken. Dieses dunkelrote Ale zeigt deutlich den Wein-Einfluss. Es kommt fast ein Sangria-Feeling auf, so ausgewogen und fastg schon süffig ist es. Der Säuregehalt ist eher elegant und mit dem fruchtig-kräftigen Körper sehr ausgwogen. Ein tolles Lambik!

Dieses mit Blaue Heckenkirschen gebraute Lambik kommt mit einer kräftigen roten Farbe daher. Am Gaumen erinnert diese Fruchtnote an eine Waldbeeren Mischung. Die Säure ist deutlich aber sehr gut balanciert. Diese 2025er Version wirkt noch nicht vollausgereift da es noch sehr frisch ist.

Aus der Flasche (bottled 04.06.2025/bbe 04.06.2035) im 2025-08 getrunken. Diese rote Ale zeigt deutlich sein Kirscharoma. Der Säuregehalt ist deutlich aber gut balanciert. Ein klassisches Kriek in perfektionierter Handwerkskunst.

Aus der Flasche (bottled 14.06.2025/bbe 14.06.2045) im 2025-08 getrunken. Dieses goldene Ale kommt mit einem deutlichen Hefe-Aroma daher. Nach hinten kommt eine feine Hopfenbitterkeit auf wodurch es an ein Saison ähnlich wird. Nur halt die leichte klassische Lambik Säure hebt sich davon ab.

Aus der Flasche (bottled 04.06.2025/bbe 04.06.2045) im 2025-08 getrunken. Dieses goldene Ale wirkt als non-sparkling Ale etwas "tot" im Glas. Die Aromen erinnert an ein fruchtigen Essig mit leichten Farmhousenote. Interessante Abfüllung, doch ich mag Ales lieber wenn sie durch Kohlensäure etwas mehr "Leben" haben.

Bottle, bottled 28 january 2022. Color: Hazy golden, nice long laating white head. Aroma: Fruity tartness, hay, some hop and subtle funk. Taste: Moderate tartness, fruity notes of citrus and grapes. Notes of hay, minerally notes. Combined with light hopbitterness and subtle rural funk. Very nice balance. Enjoying this fully on a hot summer evening on the garden terrace.
