Description
A wise friend once told us to “brew the beers you want to drink.” We took that advice to heart. While there are many great beers brewed in Japan, we still felt that there was something missing--no one brewery that fully satisfied all of our beer desires. We started KBC to fill that desire, believing that there were many others out there who felt the same way and would rally behind our products.
For our inspiration, we looked to the two brewing traditions that excited us the most: American and Belgium.

American craft beer has done more to change the face of the brewing world in the last 30 years than anything else out there. New hops, new styles, new hybrid beers, new extremes of high (and low) ABVs and IBUs. This is what we aspire for; never being afraid to try something new just because it hasn’t been done before or someone tells you that it can’t be.

Belgium is much more steeped in history and tradition, but is just as willing to continue doing what works for them, not what others tell them they should do. Effects from different yeast, both selected and wild; different taste sensations from the sweet, to the dry, the light, the heavy, the bitter and the sour, Belgian beer has been hugely varied and complex in both its methods of production and results.

While beers from both of these traditions are interesting on their own, we feel that combining our favourite aspects from both produce a more unique and rewarding product.
Our house yeast is a Belgian strain. The majority of the hops we use are American. Combining both in interesting and unique ways makes for inspired beers, flavourful products, and a really fun brewing experience. This is our starting point. Where our journey will take us and what beers we will make in the future, we do not yet know.

Draft at Craft Beer Forrest. Hazy pale golden color with a nice big soapy head. Nose has lemon zest, crackers, orange and spice with big yeast notes. Taste is more the same with great carbonation. Re-rate: Tap at Nakameguro taproom. Belgian yeast funky nose with some pineapple, wheat citrus. Bitter on the palate with lots of citrus zest. Active carbonation with a medium to medium-light body. Bitter and zesty finish. Crisp and dry. Nice. Draft at Craft Beer Forrest. Deep gold with a beautiful soapy head. Nose is very grassy with some citrus and grain that stands out. Taste has some light funk and some wheat character. Citrus and grain with a slight spicy finish. Take out from Bungalow. This Belgian IPA is Kyoto Brewing’s 2nd Core Beer (teiban) and pours an opaque gold with a fluffy head of white creamy foam. The nose is soft citrus, light(wheat?) malts and spice. Round carbonation and a fairly soft mouthfeel. The initial is fruit, the spice then a metallic tea like bitterness. Not really my cup of tea at first but it grew on me and by the time I finished the glass I was sad it was all gone.

Kyoto Brewing Co.’s Ichigo Ichie on tap at Daimaru as part of an event until July 16th. Served in a branded snifter, it’s a glowing cloudy gold with q thick soapy white head. The nose is grassy, peppery, spices with mild funk. The first sip was more bitter than expected with a it of a metallic edge to it. As my palate adjusted I got spice, cinnamon, pepper, citrus and a bit bready wheat with a refreshing dry finish. This is a very solid first core beer from Kyoto Brewing, definitely a winner.

Tap at Bungalow. Pale gold, hazy, fine head. Spicy saison yeast, lemon, grass, crackers. Crackery, bready malt flavor, lightly spicy yeast, lemon. Crisp and light. Very drinkable and nice.

Tap at Bungalow. Grassy, herbal hop nose, really grassy fresh dry hopping, leafy. Cloudy deep gold with orange tints. Great hops, soft mouth, some biscuits. Really leafy. Smooth, full bitterness. Great.

On tap at CBM Koenji. Clear gold with a medium-sized white head. Great fruit aromas with stone fruit, passion fruit and papaya standing out with some nice cracker-like malts and grapefruit notes as well. Very inviting aroma. Taste is more of the same with a nice solid bitterness that sits well next to the fruit and crackery malt. Super crisp and refreshing with a bitter finish that lingers. Clear golden color. Frothy white head. Pine and citrus in the nose that is dry and sharp. Smooth, modestly bitter mouth that is fairly light and dry. Light bitter finish. Nice approachable beer but I prefer more body and hops don’t shine as much in the mouth as I would like. Still can’t complain.

Hazy blonde color. Peaches and cream with torrified wheat in the nose. Light body, very smooth and quaffable, a touch tart and a bit funky with black pepper. Modestly bitter finish. Super well balanced, and pretty damn traditional. Great stuff.

Tap at Bungalow and Takumiya. Deep. cloudy blond. Fine and slightly rocky head. Good hoppy nose, grapefruit, light tropical fruit, crackers. nice flavor of orange-pgrapefruit-passionfruit. Good, deep fruit flavor. Biscuits. Soft carbonation with light to medium bitterness. Great.
