Description
A wise friend once told us to “brew the beers you want to drink.” We took that advice to heart. While there are many great beers brewed in Japan, we still felt that there was something missing--no one brewery that fully satisfied all of our beer desires. We started KBC to fill that desire, believing that there were many others out there who felt the same way and would rally behind our products.
For our inspiration, we looked to the two brewing traditions that excited us the most: American and Belgium.

American craft beer has done more to change the face of the brewing world in the last 30 years than anything else out there. New hops, new styles, new hybrid beers, new extremes of high (and low) ABVs and IBUs. This is what we aspire for; never being afraid to try something new just because it hasn’t been done before or someone tells you that it can’t be.

Belgium is much more steeped in history and tradition, but is just as willing to continue doing what works for them, not what others tell them they should do. Effects from different yeast, both selected and wild; different taste sensations from the sweet, to the dry, the light, the heavy, the bitter and the sour, Belgian beer has been hugely varied and complex in both its methods of production and results.

While beers from both of these traditions are interesting on their own, we feel that combining our favourite aspects from both produce a more unique and rewarding product.
Our house yeast is a Belgian strain. The majority of the hops we use are American. Combining both in interesting and unique ways makes for inspired beers, flavourful products, and a really fun brewing experience. This is our starting point. Where our journey will take us and what beers we will make in the future, we do not yet know.

KBC Fuyu no Kimagure 2026
White IPA 6%

Pouring a hazy straw gold with a thick white fluffy topping of foam. It has a hugely fragrant sweet citrus hop bouquet. Zesty carbonation with loads of citrusy lime hoppiness and white pepper and wheat malt notes.

Can from the brewery. Big burst of hop aroma when pouring. Citrus, tropical fruits, spices, some resins, spicy Belgian yeast, touch of wheaty biscuit. Slightly hazy pale gold with a tall, fine head. Flavor is light malt, bready, very dry, spicy Belgian yeast, and much less of a hop punch than the nose. Nice citrus, Simcoe comes through, as so some of the NZ or Aussie hops. Body is light and crisp.

Can from the brewery. Deep amber to brown with orange tints. Tall off-white head. Looks cloudy. Nose is caramel, chocolate, rich malt, orange, grapefruit, and light resins. Nice nose, malt is really nice. Rich malt flavor with lots of citrus hopping. The resins are there in the background, and there is a nice toasty feel to the malt. Chocolate and caramel, yes, but not sweet. Rich body. Resiny, bitter finish with some lingering sweetness. Nice.

From the can. Bright medium gold. Funky tropical fruit nose, some dankness, white grapes, and resin. Light malt. Hops dominate the flavor, resins, funk, tropical fruit, white grapes, citrus. Somewhat bitter finish. Decent but something missing.

Can from the brewery. Clear medium gold with a medium to tall head. Nice NZ hop nose: slightly dank and funky, tropical fruit, citrus, white grape, light stone fruit. Malt is clean and stay in the background. I get a touch of passion fruit, but didn't know they added some. Fruity flavor, sweet, rounded, mellow, tropical fruits and dankness. Lacks the crispness i want in the pils. Nice hop flavor though. Medium bitterness.

KBC x Vertere Butterfly Dreams
Sour Belgian IPA

Matte yellow gold with wispy white foam and a big fruity aroma with an underlying lactic tartness. Medium bodied and dry with a balanced fruity tart flavor. Solid stuff.

Can from the brewery. Deep golden orange with a tall head. Malty nose, slightly toasty and nutty, bready, biscuity, a bit doughy. Light, herbal hops. Rich, malty flavor, biscuits, doughy, just a touch of caramel and nuts. Spicy hops with a bit of citrus. Full, soft, silky body. Pretty nice stuff.

Can. Dark brown with a low, fine head and orange tints. Spicy nose of cinnamon, clove, nutmeg, orange, caramel, brown sugar, raisins. Very spicy and fruity, rich, sweet, slightly savory too, and bitter. Very balanced. Bitter spice and hop finish. Excellent Christmas beer.

Belgian Session IPA 4.5%

Hazy straw gold with thick foam and a white peppery Belgian aroma with herbal fruity hoppiness thrown into the mix. Light dry body with loads of fruity flavor by and belg it a spiciness. Fun stuff.

This is a spot on piney malty red ipa with a fairly full body and a crisp finish. It was a hit with missus.
