A blurry picture of a sweet little farmhouse popped up on their computer screen. They smiled. A few short weeks later Melanie and Jeremy White were standing at the bottom of a curving drive, somewhat stunned to realise they had just bought over 100 acres of pristine Cape Breton farmland. Perched on a southern slope facing the UNESCO Biosphere Reserve Bras D'Or Lake, a hopyard was planted, and the land was certified organic. Water naturally rich in minerals was perfect for brewing. Construction began.
Ten years later, Big Spruce Brewing is focused on creating exceptional ingredient-driven beer. All of our ales and lagers are brewed with organic grain & hops, and we continually strive to keep giving you the perfect pint, every time.

Sampled from the tap at Maxwell’s Plum. Pours a clear amber brown with a tan head that dissipates slowly to the edges. Aroma has a combination of pine and grass supported by dark grains. Flavor has a nice pine and dark grains combination with some resin supporting.

Bottle. Pours a clear dark amber brown with a light brown head that dissipates to the edges. Aroma has strong dark grains with some booze, light roasted and a good amount of barrel. Flavor combines dark grains, bourbon, roasted malts and a decent amount of booze.

Great black IPA. Pours black with good head and lacing. Good roast, good citrus infusion. Bitter finish. Well done. Cask Days.

Nice stuff. Huge pine in here, pine overdose. Pours golden with ok head and lacing. Pretty bitter finish. Some hay. Good balance. Good IPA. Cask Days. Thanks to Jercraigs and Mabel.

Keg at Stillwell. It pours lightly hazy amber with a decent yellow - white head. The nose is soft, juicy, mango, peach, passion fruit, nectarine, marmalade and candy. The taste is bitter, pine, resin, spicy action, earth, minerals, varnish, stewed peach, apricot, grass and some booze with a dry finish. Medium body and moderate carbonation. Certainly punchy. Decent stuff.

Keg at Maxwell’s Plum. It poured opaque dark brown with a small light tan head. The nose is sweet, rich, sweet chocolate, toasty caramel, creme brulee and vanilla. The taste is rich roast, ashy, charred wood, dark chocolate, earth, tobacco and light vanilla and peppercorns with a dry finish. Medium body and moderate carbonation. Very punchy. Xolid xda.

The taste is bitter, toasty grain, cereal, spice, brown bread, earth, dirt, lemon rind and earth with a dry finish. Medium body and fine, prickly carbonation. A bit messy... Not sure on this one...

Keg at Maxwell’s Plum. It pours darkest brown with a tiny light tan head. The nose is fresh, earthy roast, cocoa, coffee beans, freshly ground coffee, doughnuts and light vanilla. The taste is bitter-sweet, sweet roast, chocolate, toasty grainy, earthy roast, big coffee character, toasty cereal with a dry, toasty finish. Medium body and fine carbonation. Not a whole lot of depth, but decent enough.

Keg at Mawell’s Plum, Halifax. It pours deep amber-red with a small white head. The nose is soft, sweet, jammy, Victoria sponge, strawberry and fresh summer fruits. The taste is crisp, bitter-sweet, jammy, red berry, candy, toasty cereal, brown bread, metallic lagery notes and caramel with a short, dry finish. Medium body and moderate carbonation. Basic red ale. Far from excited me...

Keg at Stillwell, Halifax. It pours clear amber with a decent white head. The nose is bready malt, lemon sherbet, some piney varnish, earthy, barnyard and cereal. The taste is rather bitter, pine needles, varnish, some alcohol hit, green hops/grass, toasty grain, pretty spicy actually and cracker with a dry, peppery finish. Medium body and moderate carbonation. Good bitterness to it. Decent stuff.
