Description
Shacksbury Cider makes dry, food friendly wild ciders in Vergennes, Vermont. We source over half of our apples from Sunrise Orchards in Vermont as well as old, abandoned orchards throughout the Champlain Valley. We also work with Dragon Orchard in England and Petritegi Sagardoa in Spain. Our fermentations are slow and deliberate. We rarely use added sulfites. We prefer native yeast / wild fermentations and bottle condition via methode ancestrale or methode champenoise whenever possible. At Shacksbury, we believe cider can, and should, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain, our cider will change the way you think about this amazing fruit.

Tall boy cans from Covenhoven. Pint glass pour. Opaque, yellow, heady brew. Pungent lemony, herbal hops. Bright, acidic, twangy & low tartness. Grassy herbal hops, lingering mellow core-ish bitterness. Thin, dusty, moderate carbonation. Okay, better than usual in the spectrum of hopped ciders.

Vintage bottle 02/21: Brighter, big citrus acid/lemon zest, fitting botanics. Sizzling, very gummy, pleasantly dry & bitter. Love it. 4.5 On tap @ Covenhoven: 7/19 Stubby low-ball glass. Clear, thin head, dark gold. Gummy, slightly wild, Sidra nose. Tastes like a sour guava/passion fruit with any perceived botanicals being a backdrop pleasantry. Gum, apple skin bitterness. Fizzy, dry, thin, bold. ABV feels less & you can drink this till you're blind. Very good once it all opens up.

Can from Craft Brewed. Originally only available in Vermont, but this has found its way to Nashville. Pours a clear, light straw color with no head and minimal carbonation. Strong coriander seed aromas with lemon zest, pear green apple and junior berry. Stronger juniper and pear on the palate with some sweet apple at first, then becoming more tart as it moves along the palate. Drier finish with crab apple, peach skin and coriander. Pretty good, but a touch too sweet and slightly too noticeable of an alcohol presence. --- Beer merged from original tick of The Vermonter on 09 Jul 2019 at 09:40 - Score: 7. Can, pours a clear pale blonde. Aroma smells like sprite, with tart citrus. Flavour is full of tart sprite-like citrus notes. This is disgusting.

On tap @ Torst. Pale & clear in pretty holiday stemware. Surprising legs. Skin, major florals, light rind. Super Tannic upfront. Sharp, thin, bittersweet, just nearly dry. Spanish apples start to come in at a point, but are controlled. No wildness. Yeasty, dusty skin on the finish. Had another pour. Pretty good.

Can shared with Dima Sh. and Brian. Appearance: opaque pale golden with no head. Aroma: very tart and dry apples with hoppy aroma. Taste: similar. Overall: pretty good.

Can from Craft Brewed. Pours a clearish straw yellow color with a small bit of soapy head that dissipates quickly. Pink Lady apples with faint onion and floral aromas. Lowish carbonation with a lemon tartness that comes through as it warms. Some faint gooseberry notes and tart apple on the finish. Some yeast notes come out as it warms as well. Perfect on this 65 degree night here in Nashville in March.

On tap at Schilling Cider House - PDX, pours a clear pink with a small white head. Aroma brings out dry apples, pinot noir and musty grapes. Flavour is along the same lines, with apple skins and musty grape skins. Nicely balanced, with a bone dry finish. Good stuff.
