Description
Shacksbury Cider makes dry, food friendly wild ciders in Vergennes, Vermont. We source over half of our apples from Sunrise Orchards in Vermont as well as old, abandoned orchards throughout the Champlain Valley. We also work with Dragon Orchard in England and Petritegi Sagardoa in Spain. Our fermentations are slow and deliberate. We rarely use added sulfites. We prefer native yeast / wild fermentations and bottle condition via methode ancestrale or methode champenoise whenever possible. At Shacksbury, we believe cider can, and should, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain, our cider will change the way you think about this amazing fruit.

Bottle from Astor Wines & Spirits. 2015 batch. Wine glass. Cloudy, yellow/orange body. Sticky, yeasty nose, hinting at cider vinegar. Taste is sweet upfront, turning tart. Very pear-ish, full apples. Acidic, yet very juicy. Less vinegar than anticipated. Dry, dusty finish. Pretty good.

Draft at Craft Brewed. Pours a pretty gold with no head. Crazy unique nose: Tart acidic apple aromas with lemon, smoke and duck fat. Light body, tannic...funky horse blanket. Umami, more apple on the palate. Like dried apples, musty and funky. Lowish carbonation, but a lot of flavor. A golden cider with aroma of sweet apple and light solvent, light mineral notes, OK. In mouth, a nice sweet apple jam with appleskin, lactic acid, tart and pleasing. On tap at ANXO. 6-3-7-3-12

Can - Orange blossom and very perfumy. Clear orange gold. Orange and flowery with a ton of aromatics. Refreshing, but not really cider forward.

Bottle - Sweet champagne like apple and a honey like note. Clear gold with almost no head. Sweet, sour and acidic with a light nice funk. Solid.
