Shacksbury Cider makes dry, food friendly wild ciders in Vergennes, Vermont. We source over half of our apples from Sunrise Orchards in Vermont as well as old, abandoned orchards throughout the Champlain Valley. We also work with Dragon Orchard in England and Petritegi Sagardoa in Spain. Our fermentations are slow and deliberate. We rarely use added sulfites. We prefer native yeast / wild fermentations and bottle condition via methode ancestrale or methode champenoise whenever possible. At Shacksbury, we believe cider can, and should, be daring and complex. From gnarled trees on New England farmsteads to Old World orchards in England and Spain, our cider will change the way you think about this amazing fruit.

500ml bottle. Pours with a clear pale hued body. Carbonation is apparent, but does not leave much in the way of head, lace, legs, ect. Pretty standard cider appearance in other words. Aromas are bright, medium citrus (lemon, candied orange rind), light funk. Very mild VA and a hint of sulfur. Flavors are acidic, mildly funky (earthy, TCA, cheese), pretty dry but retains some fruitiness. Lightly leathery on the finish. Good tannin. Carbonation is medium low, with some viscosity to the body (for the ABV). Overall a pleasant, acidic cider.

6 oz pour on draft at Anxo. Clear golden orange with off-white ring. Aromas of apples, honey, caramel. Tastes of apples, light funk. Light body with a dry finish.

On tap at Conservatory. Pours a clear gold with small white head that diminishes to nothing. The aroma is strong apple skin, spice, oak. Thin body, oak, pear, apple, boozy, nice lingering dry finish, very good.

12oz can pours a clear, star bright gold with no head, no legs. Nose is easy, green grapes, meaty heirloom apple. Flavor is well balanced, some juicy sweetness, some light acid, apple clearly, green grape. Finishes dry, lightly tannic, light acid. Nice.

Bottle pour at Wassail VT cider tasting. nice champagne like pour. nose is tart apples and semi funky. bright funky apples, yeast, champagne, some berry. fairly tart, lovely

Poured from can at Wassail during the VT tasting. Yeasty and apple aromas. softly sweet. tart green apples and some sweet dessert apple, white grapes. some puckering on finish.

Draft at Trackside. Clear yellow color. Still. See pic. Aroma of tannins apple lemon. Taste is tannic and lightly tart fruit. Very tasty.

Bottle at the RateBeer DC Cider tasting. Apple, fizzy. Poured at probably the appropriate height outside. Hazy golden color with a small head that dissipated quickly. Aroma was apples, light yeast notes. Flavor was slightly fizzy apple notes. Light apple peel.
