Hillman Beer is a small, family-owned business located in Asheville, NC. Brothers Brad and Greig Hillman, and Greig's wife Brandi Hillman, have come together to bring the pub style back to the brewery experience. Itchy, herby caramel nose; weak peat.
Bite-y, caramel, slight acid, some unsure sourness, roasted veggies, just a mild astringency, a peppery spiciness starts to build.
Extra crispy, thin, just noticeable abv.
Okay, but room for improvement.

Can thanks to MicroGrog: Poured a caramel translucent with thin head. Aroma is fruity, dates, raisin, yeast esters, Belgian sugar candi. Taste is dark fruits, sugars, yeast esters, caramel.

Never saw this before. A house cider. Been here like 10 times. Could be terrible. 12oz pour in AVL. Clear, frothy, lager-pretty, medium gold. Oaky, browned, grassy, sweet n sticky apple nose. Semi-sweet. Lots of dessert skin & fleshy sweetness. Mint. Spicy esters, yet surprisingly clean. I wonder what else is in here. Finish is off-dry. Prickly carb, thin, medium low acid, but medium high tart bite. Noticable booziness. It's really bold for a session cider. Very surprised that this was okay.

Frothy, hazy orange gold pour. Sharp, yeasty, still fermenting oj nose. Semi-sweet. Manageable pucker, twangy vinegar, candied grapefruit, lemonade, calcium, slightly metallic/minerally, leafy pedestrian finish. Juicy, sticky, high acid, medium-high tartness, acid belly burn, noticeable abv. Decent crushability, if a bit uninspired. Slammed it while looking at the list for another beer.

Keg at Tupelo Honey Downtown Asheville, 4/28/23. New brewery! Brewery #2143, USA #1738, NC #104. Hazy orange, medium tan head, good retention. Aroma of floral and citrus. Taste is floral, mango, citrus. Thin.

House goblet, 12 ounces. Frothy, very slightly hazed, medium gold. Smell is woodsy, bitter, sour berry, pepper, a very thin veil of dry Brett funk. Taste is bittersweet with a sharp & rich fermented out strawberry edge, leaving some floral & berry. It never gets sweet. Slick, frothy, bite-y carbonation. ABV is about right. The beer we got drink pretty good.

On tap at Hillman AVL. Slightly darker than cranberry pour, somewhat cloudy, frothy. Sweet cereal, cranberry, cherry cordial, American wheat beer. Taste is more reminiscent of tart cranberry than cherry. Bright, sour apple, lemon juice, wincing level tartness. There is some cherry skin that's more obvious near the finish that longer, that's nice. Pretty sour overall & difficult to session. Texture isn't hit hard by the oats, barely feel them. Really acidic, hard to do more than one. Okay.

On tap at the AVL location. Stopped in for food, but beer is food right? Cloudy, amber tea, lingering lace. Doughy, salty, very slight fruit nose. Twangy, light acidity, earthy sweetness, chalk, creamy, warming booze, doughy salted pretzel finish. Bittersweet, leaning bitter. Yeasty, bready, hearty body, on point abv. Okay...
