At the source after leaving the Chapel Hill tasting. Thanks George!
Curated tasting at Starrlight, couldn't sit on things forever.
Pale peach pour.
Gentle floral honey, grapes, bit of wax.
Astringent berry skin & some honey wax.
Super dry, mellow acidity, lots of popsicle stick.
Overall, a little delicate.
Okay enough.

Curated flight at the source. Gotta be fast.
Bright pale gold.
Gentle, earthy honey nose.
Very sharp upfront, floral cooked apricot, a little earth. Very vapid. Tight almost sour fruit.
Okay.

Curated flight at the source, kinda on my way back from the Chapel Hill tasting at George's place.
Pale plum pour.
More floral than sharp, less fruit than expected on the nose.
Super tart, astringent, grassy, there's a popsicle stick tannic full stop.
Mostly thin, somewhat juicy, almost dry.
Great.

At Starlight after some of their good meads & trashy ciders.
Bright, neon green, Chatruese pour, spritz of head.
Earthy, sweet basil, almost savory nose.
Bright citrus & green tea mingle, diluted floral honey sweetness up the initial tartness. Not super sweet, which is a win for session meads.
Good+.

Incorrectly had some ciders after a bunch of their meads. Previously brewed by Chatham Cider before being bought out.
Pale amber pour, lingering lace.
Perceivably tart nose, pedestrian juice box.
Industrial apple, off-dry but plenty of residual, core, sharp, menthol, decent tannins, yeasty off-flavor.
Okay.

On tap after a bunch of their meads.
Deep grape drank, fizzy soda.
Sweet & juicy currant nose. Dessert apple skin.
Tart currants, juice box apples, malic, very fizzy.
Blinded by how even average pours are made better by currants.

At the source. Used to be brewed by Chatham Cider.
Off-putting neon magenta, frothy pour.
Cherry cordial & apple juice box nose.
Dry cherry soda, apple juice box, pedestrian.
Light acid, long tartess & tannins.
Industrial & ignorant but tolerable.

Had a pour after a bunch of their meads.
Pink guava-colored pour.
Floral, yeasty, cherry blossom, dessert apple nose.
Taste is off-dry, floral, cherry melon, malic acid. Bubblegum.
Industrial.
Okay enough.

Tried their ciders after having a full flight of meads.
Pale gold, unusually frothy, active.
Confectionary sugar, dessert apple nose.
Rounded sweetness, floral honey, big sulfite dust feels. Extra crispy.
Meh.

Shared by Nate and Andrea B. at the January 2025 PS tasting, 1/11/24. Clear amber, moderate legs. Aroma of honey, citrus, lime. Taste is honey, spice, lime, agave. Well balanced.
