Latin American, Made in Xicago
The vast and delicious cuisines of Central and South America hold a treasure trove of flavors, aromas and textures, much of which feels right at home in a well-made beer. We combine these ingredients and ideas with our own experiences to make subtle and deeply delicious beers, not mere novelty items. Each beer speaks with our voice and adds to the story. We put the best ingredients together so that the whole beer adds up to much more than the sum of its parts.

I had thought to use a German style Oktoberfest glass, but the label recommends a tulip. The beer pours a somewhat murky amber, with a fizzy, though somewhat persistent head. The smell… well, it seems like here we go with pumpkin spice again. It's not on the label, but some of the online sources mention "inspiration" by hoja santa, a Central American herb that adds complex flavors to cooking, kind of like the ingredients in root beer. So that might be what I'm thinking is the pie spice. The taste is caramel sweet, but not overly so. The smells are nicely focused by my little tulip after all. The taste lets my pumpkin pie spice impression dwindle away, replaced by a more complex spicy and slightly herbal note. Some of the beer sticks to my lip, so there's still some extra malts available. It's just a little stronger than usual, at 6.3% abv. A little bit of milk in the aftertaste. As I go further down, I can pick out chamomile and a little bit of pepper, maybe still a little cinnamon. It turns into a complex brew as I drink it, and it invites slow drinking.

12 ounce bottle into tulip glass, no bottle dating. Pours fairly hazy deep golden amber/light orange color with a 1-finger fairly dense and rocky off white head with great retention, that reduces to a nice cap that lingers. Nice dense soapy lacing clings on the glass, with a fair amount of streaming carbonation. Aromas of tangerine, grapefruit, lemon, peach, pear, pineapple, apricot, passion fruit, mango, melon, citrus peel/rind, light pepper, pine, toasted biscuit, light honey/caramel/nutty, herbal, and floral/grassy earthiness. Nice and pleasant aromas with good balance and complexity of citrus/fruity/tropical hops and bready malt notes; with solid strength. A bit muddy. Taste of big tangerine, grapefruit, lemon, peach, pear, pineapple, apricot, passion fruit, mango, melon, citrus peel/rind, light pepper, pine, toasted biscuit, light honey/caramel/nutty, herbal, and floral/grassy earthiness. Light-moderate pine, citrus peel/rind, herbal, grassy, spicy bitterness on the finish. Lingering notes of tangerine, grapefruit, lemon, peach, pear, pineapple, apricot, passion fruit, mango, melon, citrus peel/rind, pepper, pine, toasted biscuit, light honey/caramel/nutty, an d herbal/floral/grassy hop earthiness on the finish for a while. Great complexity, robustness, and balance of citrus/fruity/tropical hops and bready malt flavors; with a great malt/bitterness balance, and no lingering hop astringency after the finish. Light-moderate increasing dryness from bitterness. Medium carbonation and body; with a very smooth, moderately creamy/bready/sticky, and lightly resinous/rindy balanced mouthfeel that is great. Zero warming alcohol for 6.66%. Overall this is a very nice IPA. All around nice complexity, robustness, and balance of citrus/fruity/tropical hops and bready malt flavors; very smooth and easy to drink with the modestly bitter/drying finish, not overly aggressive. Very juicy and fairly dank/earthy hop complexity; nice bready malt backbone, with mild residual sweetness. A very enjoyable offering, and well made Midwest style IPA. Great hop profile as expected of citra, azacca and amarillo.

Can. Sour milk/barnyard, grapefruit juice, salt, malt, and straw aroma - kind of unpleasant. Cloudy golden yellow with moderate head. Mildly sweet grapefruit juice, smoked ham malt, mild salt, and mildly bitter straw flavor. Okay body. Not a fan of mixing grapefruit and smoked malt - borders on a fecal aroma - possibly infected though (canned on 5/16/18, consumed on 7/27/18)

Slight spice, slight sweet, slight chocolate, all stout. Almost like a mango habanero stout?
