The vast and delicious cuisines of Central and South America hold a treasure trove of flavors, aromas and textures, much of which feels right at home in a well-made beer. We combine these ingredients and ideas with our own experiences to make subtle and deeply delicious beers, not mere novelty items. Each beer speaks with our voice and adds to the story. We put the best ingredients together so that the whole beer adds up to much more than the sum of its parts.

2016 bottle from trade. Deep brown porter pour, a bit of fizz that's gone swiftly. Nose of sweet chocolate and cherry. Taste carries just a light chocolate note, and there's some vanilla, too. Would be astounding with some time in a bourbon barrel, but this is just fine. Mouthfeel is kind of light for a 10% abv beer. But there's some fine prickly effervescence, that's held up incredibly for an almost 10-year old big bottle. Warming alcohol slips in there after a while. Great high-end beer from a brewery that we keep thinking MIGHT return.

So I had this beer in 2022, no ratings since 2018, it looks like this beer was produced in 2017. The label does not have a bottling date, but does have a copyright on the artwork dated 2017. So I guess it doesn't hold up super well after 5 years. And I know where to get like 6 or 7 bottles if you want them because the beer store near me only seems to sell old out of date shit. I had hoped this one might hold up, but not quite. But based on some of the last ratings, which weren't overly descriptive, mine seems more complex. First is that it has a very interesting note redolent of barrel funk and cherry pits, slight cheesiness. No coffee. Flavor starts with a bit of funk/tart, sweet at the middle, then empty, then a rising weird bitterness. Papery, sherry-like, in the aftertaste. That's the age showing. I managed to drink the whole 750, mainly because I didn't want to waste it and wanted to get a little drunk, but if it was a drainpour, I would have drainpoured. It wasn't. I feel like this might have hit an interesting peak after 2-3 years, it had an nice funkiness and complexity, but the sherry notes really tell the story of oxidation.
