Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

On tap at brewery. Pours a clear pale yellow. Nice sweet grain aroma. Lots of lemon on the aroma. Medium mouthfeel follows through with a crisp, lemony finish.

On tap at brewery. This is a great beer -- pours a dark black. Aroma of chili and cocoa jump out of glass. The cinnamon is also there. Very unique. Flavor follows through with complex roast and chocolate with the spice from the peppers throughout. Fantastic.

Capped 750 from Wine & Cheese in Clayton, MO. Pours very, very dark amber/brown with a creamy/bubbly beige head. The primary aroma is pumpkin pie spice. Squash seems to be buried in all that. Med body. The cinnamon is very strong. Don’t know if the squash roasting did much for flavor, but maybe. Might be the best seasonal so far.

Capped 750 from Wine & Cheese in Clayton, MO. Pours hazy copper with a creamy/bubbly beige head. Aroma is dark fruit with a hint of phenol. Med body. Phenolics are a bit stronger in the flavor, and the dark fruit is good with that. Heat detectable but not bothersome. Finishes just on the dry side. I keep thinking brown sugar is present, but it could be the dark fruit. Pretty tasty ale.

750mL capped bottle. Should I be disappointed by a beer that tastes like vegetable even though that is the way its advertised? It’s a pretty looking muted golden color with visible shooting bubbles. Pour has a nice thick head that sticks around. Aroma is generally nice beer with wheatiness and faint hints of strawberry. The problem starts and ends with the flavor. Tastes like celery or other bad vegetables, almost undrinkable. Four people tried this with me and they aren’t even beer geeks; we all can’t drink it. I am trying but I it’s too hard. I would recommend others pass on this beer, particularly because of the price. It has a strong flavorful it’s just one I find very bad. Its not worth trying, imo.

Pours hazy gold with full off white head. The aroma has a nice load of strawberry followed by salty sort of vegetable rhubarb notes rimmed with a sense of black pepper. The taste has a mix of fruity tartness and strawberries and then rolls into earthy like vegetable earthiness. Nice stuff where I was pleased with the depth and strength of the strawberry notes.

Courtesy of SuperDave. Pours hazy copper with tall smooth creamy off white head. The aroma offers up Belgian yeasty spices, muted vague hops, some spicy hops and sweet apple. The taste delivers some spicy yeasty notes, spicy hop notes, some sweet apple wedges and then the addition of various spice notes that might be associated with a Saison yeast strain. Tasty brew.

Capped 750 from Wine & Cheese in Clayton, MO. Pours really black with a chocolatey tan cream head. Aroma is chocolate with a light chili burn. Full bodied. Flavor strengths seem to be chili, chocolate, cinnamon, and then slightly harsh burnt malt. It’s actually sort of creamy. The chili turns first place over to chocolate/cinnamon and just sort of builds in the mouth. Wowser!

Tap at Cicero’s in STL. Snifter poured with a thick head and an autumnal brown color. Nose is very fragrant with what I though was flowers at first. But if really is a sweet squash. Has a slightly slick mouthfeel but not heavy. Its sweet but not with residual sugars, a well developed brown sugar sweetness without the sugariness. Goes down easy. Its a sweet beer but in a good manner; novel and atypical for sure.

Pour is a clear brown with a small white head. Aroma is an intense cinnamon and clove. This smells just like fresh baked apple pie. Flavor is some more cinnamon and spice but I do detect a nice squash flavor in there as well. This was a very tasty beer but also one of those beers that you love but I don’t know If i could drink too much of this in one sitting. It is a cinnamon and spice bomb.
