Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.
Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

0,75l bottle at home shared by Pauli. Vintage 2025. Black color, tiny head. smells vanilla, bourbon, whiskey, spices, leathery. Nice to very nice smell. full body, light carbonation, oily mouthfeel. tastes whiskey, bourbon, vanilla, bitter chocolate, nutty. finishes light to medium sweet with notes of whiskey, bourbon and vanilla notes. Very nice one, very sticky, intense oily mouthfeel, not overly special just rather intense but good one

Aroma: Dark roasted malt with coconut and chocolate. Flavour: Very sweet with chocolate and coconut with vanilla. Aftertaste is very sweet. Mouthfeel is very oily.

Bottle. Pours inky black, small tan head, decent lacing. Aroma is cocoa, molasses, leather vanilla, cinnamon. Flavor is medium plus sweet, light plus bitter. Well integrated. Full body, silky mouthfeel.

Moderately hazed golden orange topped with a just off white head that thins to a swirl.
Nose is pale malts, grass, hedgerow, herb.
Taste comprises cereals, grains, grassy, light skunky notes.
Medium bodied, light prickly carbonation, semi drying close.
Okay - expected a little more tbh.

Draught @ First Draft, Chicago IL (Dec 2025). Clear dark brown with copper-red highlights, small frothy beige head, toffee aroma, high carbonation, bitterish caramel-toffee taste, dark roasted malt flavor, thin body, long finish. Smooth brew.

Panda thanks to Cloin. Near opaque dark brown beer, small bubbly tan head. Smooth palate, a little soft. Very mild carbonation. Soft dark malts, mellow dark chocolate. Soft but dominant cinnamon. Some milk chocolate on the back end where the vanilla intersects the dark malts. Too much cinnamon for my liking, makes it one note.

Dark brown, thin head, aroma is rich and complex, with vanilla and cassia. On the palate there’s some blackberry fruitiness, light vanilla and some refined malt and barrel. Jesus shit this is refined and beautiful.

Can. Pour is a hazy straw color with a massive foam head. Aromas are lovely for the style… bananas, cloves, bread. I’m the been a while since I have had a saison that was solid. Great work, Perennial!
