Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Leggy, translucent brown sample at the roost. Ring of beige head. Nose is weird... huge baking spice, cinnamon and nutmeg, big caramel and treacle, cocoa. Not fully identifiable as a barleywine. Flavor has black pepper and cinnamon, nutmeg, booze, malt, caramel and cocoa. Definitely not a big stout base, but the adjuncts outside of the spices don't leave you feeling barleywine either. Finish is very spicy and peppery. Full bodied and sticky. Lots happening. 8 7 7 8 7.5

Pour is a clear amber with a small white head. Aroma is a very slight earthy malt. Flavor is a little better with some sweet toasted malt and a little herbal hop. This one did not wow me like I thought it would.

Pour is a cloudy gold with a large white head. Aroma has plenty of yeast esters. Flavor is a bold spicy with lots of white pepper. Finish is clean but unremarkable. Pretty good low ABV table saison.

75cl bottle, waxed, but with a small string coming out of the wax, so it is easily opened.
pours black with a tiny bit of transparency, but def. black and settles pitch black with no head. aroma is almost entirely coconut, there are some subtle chocolatey and sweet notes that makes the coconut come off as bounty like (and i don't like bounty at all bc it's too sweet and does not taste like real coconut) . also dark chocolate and roasted malts in the aroma. all is well blended and well balanced but no doubt at all they dropped at least one coconut tree into this bottle.
flavor is toasted coconut, roasted malts, dark chocolate, white chocolate, quite sweet but def. better than toblerone, although the sugary coconut flavor is in there somewhere. texture is velvety and smooth, hinting high quality beer. if you like sweet coconut this beer will top your charts for sure. it does not taste artificial at all, tastes like they soaked a coconut forest in white and brown sugar, then somehow stuffed it into a heavy solid imperial stout. Some serious craftmanship going on here, just sayin'

Bottle at CBJ Tasting. Dark glossy cola brown. No head. Aroma has mocha and coconut with a hint of booze and malts. Flavourwise it has sweet vanilla chocolate cake over booze. .Medium bodied. Slick. Soft-fizzy carbonation. Long dry somewhat astringent finish.

Sweet and simple. Some
Cinnamon. Boozy kick. Bit of roast. Ash. Cocoa. Drinks fine but it is a bit simple.

Bottle shared at the craft beer junction bermondsey tasting. Many thanks to Colin for this one. A opaque black brown coloured pour with a halo of tan head. Aroma is toasted cinnamon, brown sugars, brandy snap sugars, apple,, light tang. Flavour is composed of semi sweet z rounded z brown sugars z singed brandy snap sugars. Toasted apple cinnamon mellow vanilla sweetness.. Alcohol.

Poured black in color, not much head.
Strong barrel aroma, wood, some booze, coconut . Flavor has light spices, sweetness, caramel, wood. Heavy stuff.

Black topped with a khaki head that thins to a swirl.
Nose is chocolate, light roast, vanilla, toffee fudge.
Taste comprises chocolate shavings, vanilla, marshmallow, roasted tones, booze tunes.
Medium plus bodied, fine carbonation, drying close.
Tidy sipper but expected a little more wow.
