Description
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Can, from Beer on the Wall, Elmhurst IL. Pours lightly cloudy dark yellow-orange, foamy off-white head, orange peel aroma, adequate carbonation, medium bitter orange peel taste, alcohol undertones, smooth body, long finish. Well balanced and easy to drink despite the ABV.

47,5cl Blik van Beer Republic. Troebelgele kleur, witte kraag. Tarwe, licht granig, licht kruidig, in de smaak komen de peperkorrels terug, weinig spannend verder. Lichte body.

(Draft at Biererei, Berlin, 16 May 2026) Black colour with foamy, brown head. Malty, roasty, vinous nose with espresso, soy sauce, oak wood, whiskey, vanilla and tar. Malty, roasty, vinous taste with notes of espresso, oak wood, whiskey, vanilla, dried fruit, raisins, figs, soy sauce and a balanced coffee bitterness in a warming and slightly boozy finish. Full body, quite sweet. Rich and powerful, with a generous whiskey barrel character. Very nice.

Plenty of latte and some coffee. Roast, caramel, chocolate. Pours black without much head retention. Oily consistency. Bittersweet finish, but the milky sweetness hangs around with icing sugar hints more than the bitterness. These Sump beers used to wow me a lot more back when they were along the few doing this pastry stout thing. Tap at High Side.

Draught @ Franklin Tap, Chicago IL (Dec 2025). Clear pale yellow with a small frothy off-white head, citrus aroma, medium carbonation, medium bitter light citrus peel taste, smooth body, long citrus peel finish. Smooth American Pale Ale.

Sweetish, caramely malty and slightly roasty with some toffee, prunes, figs, rye, syrup, barrel, bourbon, chocolate and vanilla. Quite complex and pretty balanced, perhaps slightly on the sweet side, and surprisingly thin body for the ABV.

Intense coffee bean overdose with some sweet milky chocolate sauce, vanilla, bourbon barrel heat, hints of oakiness, cocoa, roastiness and creaminess. Pretty complex and balanced, lactose notes are also really subtle. Tasty coffee stout.

Can from Kerrera, Guildford. Opaque amber-gold. Foamy translucent white head. Aroma is malty and earthy with a yeastie edge. Flavourwise there's light citrusy sourness with a ligher metallic edge, over doughy malts. Develops a sherbert sweetness and more peripheral grainy bitterness. Light. Slick. Soft lazy fizzy carbonation. Long dry slightly astringent finish.
