About
Our philosophy is to brew beer with the adventurous craft beer drinker in mind—focusing on hand-crafted, small batches of beer, using local, seasonal and organic ingredients as much as possible.

Our beers are influenced mostly by Belgian and American craft styles, but the addition of premium ingredients such as fruits, spices or wild yeast strains sometimes causes the beers to defy traditional categories. Our barrel aging program features a wide variety of beers aged in wine and spirits barrels, ranging from a Rye barrel-aged Mexican Chocolate Stout to a wild yeast-fermented Saison aged on Missouri wine grapes in French oak wine barrels. We strive to always achieve balance with each of our recipes, making our beers exceptional with food.

Reviewed from notes.
Can to lager glass.
Appearance: misty yellow colored with a two finger white foamy to semi-bubbly head, (hmmmm....), well, the head dissipated to leave some light lace
Aroma: herbal to earthy to grassy hop spices over top of a light biscuity-like malt
Flavor: blends the prior noted aromas together in a semi-spicy to grassy sweet tone; mild finish of the malts and semi-spicy hoppiness
Texture: light to medium bodied, sessionable; fairly clean and smooth along the tongue
Overall: good enough pilsener I could return to.

CJB Tasting. Hazy-opaque gold. Thin white head. Aroma has sweet edged citrus and underlying porridge. Flavourwise is similar with a dry streak. Light-medium bodied. Thin. Light. Long dry slightly astringent finish. Not particularly exciting

Rather drinkable if basic. Dry citrus, lemon peel, pithy grapefruit. Not bad.

Very dark brown and opaque. Syrupy, really full bodied. Raisin aroma, with dark fruit and cinnamon taste.

Poured hazy and orange in color.
Weird aromas of breadcrumbs, spicy clove and ripe apples. Something is off here.

On tap at Clark Street Ale House. Pours a dark brown with a brown head that dissipates slowly to the edges and laces. Aroma has dark grains and roast with a hint of chocolate underlying. Flavor has a dry roasty dark grain with some bread and a hint of chocolate.

Bottle at home from trade. Black with pretty much no head. It’s super intense vanilla on the nose with lovely bourbon, oak, a touch of booze and spicy notes. Damn. It’s sweet but certainly it cloying or too far. With a lovely fairly thick texture too this is a winner. Great stuff!
