Description
We’re a small Belgian brewery on the grounds of a four-generation-old family restaurant in Damme. We brew classic Belgian styles with a twist, as well as international styles not common in Belgium.

In 2022, we decided to join forces with Hedonis Brewery and start a new brewing site in Michelbeke, in the heart of the Flemish Ardennes.

Keg at the beer merchants tap. A deep amber brown coloured pour with a loose beige head. Aroma is sweet toffee, candied orange, brown sugars, burnt sugars. Flavour is composed burnt toffee, liquorice, grassy hop, orange rind, tangerine, brown sugars. Palate is tanin, semi sweet, chewy. Aggressive firm bitterness.

Keg at Beer Merchants. It pours clear amber with a small white head. The aroma is soft, sweet, juicy, orange marmalade, tangerine, kumquat and crystallised sugar. The taste is dry, bitter, pithy, zesty, tangerine, kumquat, peppery spice, resinous, pine need, grass and earth with a drying, resinous finish. Medium body and fine carbonation. Not bad.

Spring tripel with honey and lavender, with historical theme, one of the latest Siphons to date. Thick and frothy, eggshell-white, papery lacing, stable head over a misty peach blonde beer with a fine yeast suspension and lively, fine strings of sparkling. Aroma of iced tea, apple juice, lavender soap, ginger, pineapple, honey, cooked sweet potatoes, jasmin, white bread, gin and some clear, but fortunately not too overpowering DMS (overcooked white cabbage). Fruity, quite colourful onset, banana, peach and pineapple notes, sourish edge around a sweet core with residual sugariness and finely tingling carb. Slick, lean body, quite 'clean' white bready and lightly caramelly malt sweetish body drenched in a lot of ethereal, almost soda- and perfume-like lavender spiciness, but once this passes a bit, a more delicate, fragrant honey aroma peeps through as well. Leafy hop bitter note and warming, brandy-ish alcohol in the finish, with a refreshing, bright citric effect lingering a bit over a bready yeasty end character. Sweet and spicy tripels are not my favorite beer (sub-sub)style but admittedly this one is quite intelligent, colourful and even refreshing in spite of its ABV; just too bad for that DMS note, though, something more of these Siphon beers seem to suffer from.

Keg at HL3, 17/05/18. Very light haze on an amber copper pour with a decent light beige head. Nose is smoked malts, burnt toffee, dried fruits, bonfire notes. Taste comprises beechwood smoke, dates, orange peel, some hop presence, light oak, toffee. Medium bodied, fine carbonation, semi drying close. Decent smoked affair.
