At a beer tasting on JMune 5, 2010, thanks to deft!Hazy golden color, white head. Sweet, apple taste. Sweet apple scent. Thin mouthfeel, low bitterness.

Bottle. Clear, deep red color with lace. Aroma of cherry, butter, and sweet, light malt. Tastes like their kolsch with cherry added. A bit too much diacetyl. Decent cherry flavor, light, not too sweet, but not all that interesting either. Rice is included in the recipe. Not bad. Decent bitter finish. Rather bland but inoffensive.

180 ml cup sake, in a box, with a little piece of Blowfish fin in a ziplock with it. Following the directions, I put the fin into the cup and heated it in the microwave. Interesting aroma of smoky fish, sweet rice. Quite food-like. Smoky, salty flavor, with some rice, and a bit of fruity sweetness. Leaving the fish in there a couple hours and coming back to it proved too much--overwhelming. Had to thin it out with some Kinbishi. Strange and interesting, for sure. Goes well with, well, fish.

300 ml bottle form the brewery. Aroma of vanilla, melon, banana. Sweetish and rich. Fruity, sweet flavor of caramel, grapes, vanilla, banana. Too flowery and cloying. Ok but not good.

300 ml bottle from the brewery.
Thin orange-pink color. Strong sake aroma, rice, sake yeast, spices, with a bit of fruity ume in the background. Flavor is also a clear mix of sake and ume. Clean, not so sweet, with sour plum, caramel, rice. Clean and light, with the sake flavor distinctly remaining. A very nicely drinkable and light infusion. Not really surprising or moving, but well done.

From the 1.8l bottle at the brewery restaurant. Aged Daiginjo brewed in 1990. 20 years old!
Aged aroma with caramel, funk, barrel, and sherry. Oxidized but not overly so. Almost nutty flavor, with peaches, almonds, pear, caramel. Fruity, with sherry notes. Amazingly smooth and rounded. Wow! Maybe one of the best sakes I’ve ever had. Very much worth the ¥850. As far as I know, this is only sold at the brewery restaurant, and you can only buy 120 ml per customer!

Fruity, woody aroma with saw dust and a bit of spice. Peppery, spicy, citrus flavor with cherry. Flavor is light and subtle but long-lasting. Decent. Not as good as their Kizakura Nama ginjo.

Straight from the barrel at their restaurant. I don’t think this is ever bottled.
Light aroma of cedar and fruit, including some citrus. Big, spicy, peppery, cedar flavor. Quite strong alcohol. Decent, but the cedar overwhelms everything else.

From the barrel at the brewery restaurant. I don’t think it is bottled exactly this way, but they do have a Ginjo Nama genshu which should be pretty close.
Spicy, citrus aroma, fresh and full. Nicely fresh and fragrant. Full flavor, sweet, flowery, with bit fruit. Very nice, with all you expect from a nama ginjo. Big tastes. Very nice.

You can feel the rice as you drink it (aragoshi=going down roughly). Hot and alcoholic. Spicy milk and vanilla flavor, just a bit sweet. Ok, but the least impressive of the day. Almost a doburoku, there is so much solidity to it.
