About
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.
We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

On cask àt Cloisters. Appearance - hazy yellow. Thin white head. Nose - orange, tinned peach and lightly bready. Taste - more of the same with orange zest closing it out. Palate - light bodied, creamy texture, dry finish. Overall - quite n.

Can from Appellation Wines. Appearance - pale yellow with a light haze. Foamy, white head. Nose - fiery ginger. Ginger biscuits. Taste - proper ginger heat, then ginger biscuits again. Palate - light bodied, dry spicy finish. Overall - I'm not into adjuncts but this is enjoyable.

Can from Appellation Wines. Appearance - cloudy brown. Decent white head. Nose - tangy pineapple, passionfruit and brown bread backdrop. Taste - more of the same, really! Palate - close to medium bodied, tangy, slightly sour finish. Overall - quite nice.

330ml can from Cork & Cask. Gluten Free. Orangey reddish amber colour, pink foam head and aroma of blackcurrant, pale malt, apple. Taste is sweet & tart, tangy, malt, apple, blackcurrant, with raspberry, marzipan, vanilla hints, some drying citric acidity and bitterness. Light bodied, soft carbonation, sourish dry bitter finish. Quite drinkable.

Can from Westhill Service Station. It pours clear straw yellow with a small fluffy white head. The aroma is bright, zingy, sherbet, juicy, white grape, tart white wine, gooseberry, elderflower and some musty funk. The taste is crispy, dry, clean, crunchy, bright, tart, sherbet, sour candy, white grape, gooseberry, must, lime, kiwi, elderflower, soor plooms and clean malt base with a dry finish. Average body and moderate, fluffy carbonation. Crisp, puckering and plenty of green fruits.
