Description
Pilot was born when Matt Johnson and Patrick Jones met while studying for masters degrees in Brewing & Distilling at Heriot-Watt University in 2012. A shared view that there was something different to be done in brewing – not traditional real ales, but not just another U.S. craft beer clone either – led to home-brewing together, which eventually led to buying a second-hand brewhouse and moving to the heart of cosmopolitan Leith, commencing brewing right at the end of 2013.

We’ve never done things the easy way. We dismantled the plant ourselves. We moved it to Leith and rebuilt it ourselves. We dug out the drainage (pro-tip: pay real men to do that), installed the flues and built the cooling system ourselves. We design, brew and drink the beer ourselves. We are Pilot.

Keg. Murky golden/brown body with a dense off-white head that slowly fades. Excellent lacing. Aroma of pineapple and mango. Flavour of orange, honey and banana sweets. Medium to full body with an oily texture. Soft fizz. Impressive flavour for 4.0% ABV. One of my go-to beers.

Cask from Noble’s and The Pantry, and can from Cork & Cask. Dark brown body with a tight tan head than holds well. Excellent lacing. Aroma of espresso and chocolate. Flavour of coffee, sweet milk chocolate, plum and a hint of vanilla. Medium body with an oily mouthfeel. Very rich and packed full of flavour - not sure if I could drink more than one in a sitting though.

Cask at the Hanging Bat. Pours deep dark brown, near black. Nice tan head. Aromas of coffee and light sweet notes, milk chocolate. Taste is a lot more fresh coffee, sweety finish. Very nice.

Cask at the Claret thanks to Dave via Colin. It pours lightly hazy amber with a small bubbly head. The nose is earthy, tea, peach, orange and spicy notes. The taste is bitter, earthy, tea-like, citrus peel, spicy bitterness, peach and caramel with a lingering bitter-earthy finish. Medium body and soft carbonation. Interesting and good depth.

Cask at The Guildford. Pours clear pale gold, thin white head. Big grapefruit and pine aromas. Bitter taste. Long, dry, bitter finish. Enjoyable, and nice to see a cask US-style IPA that works so well.

Cask at The Vintage and The Pantry. Clear golden body with a thin white head. Light lacing. Aroma of lemongrass, elderflower and straw. Sweet flavour of peach, ginger, apricot and lightly roasted malts. Light peppery finish. Medium body with an oily texture. Flat carbonation. A touch sweeter than I’d like, but this is a very distinctive, tasty beer. Very nice.

Cask-conditioned at the Three Tuns, Bristol 25/1/2014. Amber coloured with a slight white head. Citrus fruits, some pineapple, green tea and a lingering slightly herbal, dry finish. Unusual and enjoyable.
