37.5cl black waxed bottle pours with a deep dark ruby red to dark brown colored body that supports a full firm tan head of foam. The aroma offers up date and fig like dark fruity esters as well as a bit of molasses and a hint of caramel reduced sugars with a mild undercurrent of the bourbon barrel treatment spirits. The taste delivers a soft smooth mouth feel where fig meets stewed plums and earthy date estery fruity sweetness riding on a supple carpet of sweet malts. To midway smooth sweet molasses is noticed as the soft sweet smooth bourbon spirit bubbles to the surface. This is a smooth rich sipper that may benefit from one or two more years mellowing out in the cellar. But, drinking might fine right now.

Pint can pours with a crystal clear pure gold colored body that supports a white head of foam. The aroma offers up tangelo, grapefruit, a bit of orange marmalade and then a thin hit of melon followed by berry fruitiness. The taste delivers pleasing citrus hoppy depth and citrus hop bitterness. I get largely grapefruit and a few flacks of lime zest followed by more juicy notes of guava flowing into a nice berry fruitiness to midway. This remains crisp and dry with minimal sweetness and it's also really hitting the spot right now. A few more sips later reveals an herbal to woody facet to pine hop bitterness. Nice. Please do this one again.

pours brown, settles very dark brown with a small smooth film head.
Aroma is like a good soft dark chocolate cake. dark chocolate, toasted coconut. aroma is very smooth.
flavor is chocolate , roasted malts, chocolate cookies towards the end, tempered alc. level that is very well hidden, end is slightly roasted malty - enough to make it interesting. very very soft velvety fell and flavor.
there is a cake spicy note i can't place - similar to cinnamon or cardemom or a mix of several spices. cost 230DKK for a 35cl bottle.

Bottle at Peders Barreled Souls TTO (02/08/2025) - Thanks Grant for the birthday beer! Dark sweet and lightly roasted malty with notes of chocolate, some caramel and sticky toffee apple sweetness from the brandy aging coming through, nice body and mouthfeel, dark sweet malty into the close. Lovely.

no vintage on the 33cl black waxed bottle with a purple chili on the top right.
They change the reicpe each year so make sure you'r rating is placed correctly.
Aroma is like sweet dark chocolate cake, also some bourbon, a bit of flowers or honey, a lot of roasted malts, the flavors are super smooth and exceptionally well balanced, it's rare that a pastry stout aroma is this good. in the end perhaps a tiny bit too coconut perfumey but that is a subtle detail , in general super great aroma.

flavor has a bit of chilies bite, chocolate, toffee, roasted malts, instead of a sharp hop and roasted malts driven and coffee driven bitterness towards the end, there is more like a chili pepper driven stingy bite as balance - it's super gentle but certainly there. Works very well, like dark chocolate with chili. Tastes in a way like the most well done hot chocolate with chilies you could possibly imagine. only a bit of coffee and roasted malty notes added. Mouthfeel is thick and smooth. the bottle was close to 300dkk so this is crazy expensive, but I do feel that it is in another league compared to the extremely good imp stouts you can get around 100dkk per small bottle. The chili just works SO good. The velvety smoothness is off the scale

Pitch black colour, small brown head. Aroma is biscuits, chocolate cookies, some liquorice, wood and mild alcohol tones with some whiskey to it as well. Flavour is toffee, bananas, some chocolate cookies, mild liquorice, alcohol and a bit wooden tones. Complex. Alcohol shows, but is not ruining anything in this one.

Lots of sweet malty molasses with caramel and toffee, brown sugar sprinkle, dark dried fruit shred, bourbon and oak wooden accents, sweet singed brown sugar, full bodied, intense sweet malty lingering finish. Lovely stuff.

Buying it at beerolution, Troisdorf, drinking it, yesterday after a heavy day of job, at night. Correct ipa, sweet for the style, fruity, hazy, sparkling, smooth and malty, syrupy, lovely thing before to sleep.
