We began serving up fine beer and food at our downtown Corvallis brewpub in 2008, and have since opened up a European-style pub—Caves Bier & Kitchen—as well as the Block 15 Brewery & Tap Room in south Corvallis. We are proud to have remained brewer-owned from day one.
Our 20bbl production brewery, built in 2015 and located in the shadow of the coastal range in south Corvallis, is the workhorse of our brewing operations. In addition to an increased-capacity brewhouse, our production brewery houses custom-designed Uni-tanks, a custom-fabricated mixing tank, a Meheen bottling line, and a Wild Goose canning line.

Renewal for 2026. Golden body with thin white head. Fruity hop aroma with a citrus note. Hoppy taste , evergreen and citrus. Smooth hop finish.

Orange body with white head. Citrus and herb aroma. Hop forward taste with a bit of berry. Crisp hop finish.

500mL bottle, pours black with a small tan head. Aroma is dominated by cardamom and anise upfront, swamping everything else other than maybe a bit of juniper; not really getting the bourbon at this point. Flavour is fairly rich—the base is strong and supports the cardamom and anise, with subdued bourbon and cocoa. Actually tasteful use of the adjuncts, even if they’re rather bizarre in this context. Very good.

Poured from 500mL bottle. Very dark brown with beige head. Lots of cardamom and chocolate, feint juniper and star anise fennel notes. Mild background barrel, nicely balanced.

500mL bottle. Pours black with a beige head. A huge punch of cardamom and juniper on the nose along with roast, chocolate, and bourbon. Flavour has dark chocolate, cardamom, anise, and juniper. The base is solid and roasty. Bourbon barrels are well-integrated. This is fantastic.

Pale gold with thin lasting white head. Aroma is hoppy, citrus resin and green. Dank citrus hop taste with a little malt. Crisp finish.

There's a slight haze, but this is luminescent, with a thick head. Sticky cannabis hops...high density resin here, with a touch of allium, pear, and maybe a bit of cantaloupe in there as well. On the palate, a surprising orangey note up front. Clean pale malts, rich bitterness, resinous, and a decent alcohol hit in the finish. But it's well-integrated. Lychee and orange in the finish. Very good TIPA.

Smells like a toothpaste to me, lol, because of cardamom. Taste is along the same lines, quite bitter, roasty. Ok.

Dark brown, thin head. Lots of cardamom on the nose along chocolate and barrel. Thick, chocolate, lively with that coriander. Well balanced like Indian chocolate.

Pour at the 2026 Dark Arts Festival. Near black pour, ring of silky beige head. Savory aroma, vanilla, cardamom. Taste is chocolate and licorice. savory spices. Really balanced us of the adjuncts.
