Description
In Autumn 1985, I was introduced by John Stewart, a neighbour and early eco-warrior, to the art of cider making using locally harvested cider apples creating my very first batch of cider. Opening the barrel for the first taste in early Spring was an eagerly anticipated magical experience. The cider apple was transformed into a delicious and moreish drink.
Year after year I continued this tradition, perfecting the process until 15 years ago I plucked up the courage to take my cider to Stratford Farmers market. The feeling of pride when people handed over their hard earned cash for a cider I had made was amazing. Made all the better when those same people returned time and again for more!
Things have moved on from those early days. The industry has evolved, we've perfected our authentic, fresh pressed ciders and we're excited about introducing some delicious new varieties and styles to our range ā still made properly of course. We're really exploiting the versatility of the cider apple to make what we think (and we hope you do too) are some surprising, rewarding and sometimes challenging new ciders. Watch this space!
So we hope you good folk will join us on our journey of exploration as we continue to make our classic blends along with our exciting new ciders. One thing we've definitely learnt over the years is that we love crafting and enjoying cider with you and for you. Long may it continue...

Box @ Stable, Birmingham. Pours a misty gold, lightly sour fruit aroma. Taste presents an initial mild sour astringent tang, with decent farmhouse apple fruit emerging. Becomes moreish after half a pint.

From tap at Amundsen Spiseri & Bryggeri in Oslo with IJ 12.02.17. Clear golden. No head. Aroma and taste of apples that has fallen down from the trees and apple zest. Leather and a hint of smoke in aftertaste. Low or no carbonation. Complex and drinkable.

Keg at six degrees north... Pale yellow.. Thin white lacing.. Soft pear fruit nose... Juicy pear.. Soft sweet pear dry

Tap at Wassail prior to VT cider tasting. Rich deep golden colored. Nose is rich Apple skin and slight white wine. Tastes of deep apple, sugary but in no way cloying, velvety palate slight florals and wine notes. Interesting and quite good.

500ml Bottle @ Stable Bar, Birmingham. Pours clear gold, no head. Aroma is moderate apple fruit with sour hint. Taste is clean with a pleasantly souring farmhouse feel that gives what would normally be a straight-up bottled Medium a characterful oaky edge.

Box @ Stable, Birmingham. Pours a hazed pale gold. Floral aroma. Taste bears good elderflower integration with medium sweet apple juice. Good balance of flavours, not overly floral or sweet. Not bad.

Box @ Stable, Birmingham. Pours a misty pale gold. Aroma is autumnal perry pear orchard. Taste is very light with a soothing, medium-sweet perry fruit character and a light acidic tang. Not bad at all.
