YellowBelly poured their first pint in May 2015, but the idea was born long before that. The founders of the brewery Nicky and Simon Lambert attended a brewing course in Manchester in 2009, and from then on the dream of opening a brewery on the site of their family pub began. Their first aim was to turn their pub into a craft beer destination in the heart of Wexford Town. Focusing on Irish Craft Beer & Spirits they quickly built up an exciting range of quality Irish products and went about changing the tastes of locals and enticing tourists into their pub. With a market established they set about work on their own 200 litre nano brewery in the basement of the pub. This work began in 2013, converting old store rooms into a semi-automated brewery, built using reconditioned tanks and a bit of local sweat and knowledge.
The fruits of that labour were a 200 litre Brewhouse capable of producing 20 kegs a week split across 3 products. A pale ale, lager and a special. This weekly special quickly put YellowBelly on the map. Under the stewardship of Head Brewer Declan Nixon over 100 unique beers were produced in our first year, with Simons Lambert & Sons being the only outlet to get your hands on them. Some of these early beers include the likes of Castaway and Citra which have become staples of the brewery throughout its history.

Creamy white good mostly lasting head. Yellow colour. Moderate malty and heavy hoppy aroma. Moderate bitter flavor. Average moderate bitter finish. Oily palate.

Can @ fonefan tasting. Nice head with good duration. Color is golden. Aroma and taste are sweet malt, hops, grass, straw, fruits and has a light bitter finish.

Can @ Fonefan tasting. Clear golden with a white head. Aroma is sweet, malty and moderate hoppy - citrus and fruity. Flavor is medium sweet and moderate bitter. Dry and moderate bitter finish. 080122

--Sample, thanks fonefan! -- Almost clear pale golden, small head. Aroma of apples and grass. Dryish with light body and clean, rounded mouthfeel. Bread, grass and apples. Mid bitter finish.

--Sample, thanks fonefan! -- Clear deep ruby, small head. Aroma of blueberries and ashy chocolate. Dry with light body and clean, crisp mouthfeel. Burnt toast, blueberries and notes of licorice. Mid bitter finishh.

Can thanks to Ashton McCobb. Pours hazy golden orange with a short-lived thin white head. Aromas of strawberry, orange and biscuit. Taste is tangy sour, strawberry, biscuit again. Sour finish.

ABV: 4.3%. Clear medium to light orange yellow colour with a average, frothy, good lacing, mostly lasting, off-white to white head. Aroma is moderate malty, pale malt, sweet malt, grain, biscuit malt, marzipan malt. Flavor is moderate sweet with a average duration, biscuit malt, marzipan malt, pale malt, sweet malt, medium dry. Body is medium, texture is oily to watery, carbonation is soft. [20211003]

Aroma is moderate malty, toasted, dark malt, caramel, red malt, dried fruit, nutty notes. Flavor is moderate sweet and light to moderate bitter with a average duration, sweet malt, caramel, dried fruit, toasted, light dark malt, nutty notes. Body is medium, texture is oily to watery, carbonation is soft. [20211003]
