Description
Brewed in Silchester and drawing inspiration from new world hops, Germany’s malts and beer styles from across the globe, we vow to make your drinking experience as enjoyable as our brewing.
The Brewery was taken over in early 2022. The new owner then bought Boss Brewing Company in Swansea. Boss went into liquidation, but restarted, and in 2023 Wild Weather closed the Silchester site and relocated to join Boss in Swansea.

Tap at the Moulsham Tap, Chelmsford. Pours hazy pale gold with a vert small white head. Hoppy and very fruity aroma. Moderate sweetness, medium to heavy bitterness. Very good.

Tap at the Moulsham Tap, Chelmsford. Pours amber with a raspberry tint and a small off-white head. Aroma of raspberry, citrus, lght chocolate and very slight hint of pepper. Light sweetness, medium tart sourness. Light body, slight oily texture, soft carbonation. Sour finish. Very enjoyable.

Can from the Offie, Leicester. Dark brownish gold, cloudy with a ring of white head. Sour canned pineapple juice aroma. Very tart taste with a saltiness near the end. Bitterness in the finish with more pineapple in the aftertaste. Watery body with gentle carbonation. Pretty good stuff.

Cask @ Ale House, Chelmsford. Nice head with short duration. Color is amber. Aroma and taste are rich fruits, berries, citrus, lactose acid and hops. Nice sour finish.

Keg. Ham.nts Oktoberfest, 13/10/17. Sweet bluberry aroma. An opaque brown. Tastewise it's bluberry juice. No particular sour element to it. Palate, fruit juice again. I liked this but it was more alcopop than Sour/Wild Ale.

Keg. Hants Oktoberfest, 13/10/17. Sweet vanilla and coffee aroma. Dark. No head. Sweet - initially vanilla before it does get reminisant of Tiramisu. On the light side and surprisingly thin. Soft carbonation. Abrupt finish. Decent.

Cask. Hants Oktoberfest. Pungent lemon aroma. Uber cloudy. Kinda ill looking..Thin white head. Very lemony. As if juice had been added.to the beer. Thin. Slick. Flat. Abrupt. A lemoncello beer. Not mindblowing. Restrained.
