At Proper Saké Co., we take great pride in our symmetry of historical reverence and modern technique. Beginning with the koji, every step of the process is painstakingly completed in small batch by a single human! Each bottle delivered is hand packed and sent out at peak freshness for a quality of product that has previously been unattainable in the Americas. Our tasting room offers a revolving cast of unpasteurized, unfiltered sakes on draft, Japanese style dry lager and taproom only special releases. Our aim is to continue experimenting with both classical and innovative methods, to please purists and newcomers alike.

From a pint can. Pours a clear pale straw with a thick white head. Aromas of lime and rice. Flavors are moderately sweet grains with a nice hop finish.

16oz can from Vitis Union Market, consumed from the can. Nose has starch, corn, yeast, lime. Flavors of lime and yeast and some flowers and herbs. Finishes crisp. Nice enough.

Not a bad lager, just indistinguishable among most craft lager offerings, with a moderate grainy sweetness touched by lemon and white bread, finished off with a mild Sorachi floral bitterness. Notes of rice and corn and yeast come through in the fade. Pretty, and drinkable for what it is, but nothing memorable.

Draft at Proper Sake. Pours a clearish silver color with 2 fingers of a rocky foam that lingers, then dissipates. Very floral nose with jasmine, rice chaff and sticky rice aromas. The body has a light and smooth jasmine tea light quality. Smooth, refreshing and very drinkable. Could use a touch more body and a little more attenuation. Still a nice first stab on a highly drinkable rice lager that is a nice palate cleanser at Proper Sake.
