At the base of the manufacture of our beers, Boraldes water, as well as other sources from the Aubrac mountains, directly supply our brewery. Before being used, the water is naturally purified by two particle filters: the first, in stainless steel, contains activated carbon, the second is a fine filter of 0.02 microns. This very basic water (pH 8), characteristic of our region, gives our products a unique flavor.
Beyond water, an essential component in the manufacture of beer, we select quality raw materials. These premium ingredients release aromas that create the typical characteristics of the beers we make. Our malts and hops, guaranteed GMO-free, come from exceptional terroirs.

Mysterious bottle from Seijo Isshi. Hoppy and spiky maltiness, bit of sweetness, Belgian feel, bit of a mix, but surprisingly alright, not sure it's supposed to be exactly like this but it works for me. Pleasant suprise.

'English style' IPA with very Indian label, made in France by a microbrewery I never heard of, thanks Craftmember for sharing! Snow white, medium thick, mousy, irregularly shred-lacing but largely stable head on a 'dirty orangey' peach blonde beer, cloudy with sediment. Aroma of old dried grapefruit peel, toasted onion, old garlic, old cheese rind, old dry biscuit, dusty herborized wormwood leaves, 'herbes de Provençe', candied orange peel, patchouli. Cleanly fruity onset, dried peach aspect, medium carbonation, supple peanutty and old biscuit-like malt base, bread crust, minerally side effects; firm hoppiness, bit piney, peppery and grapefruity but not overly expressive aromatically speaking, still providing a long, dry, peppery, leafy bitterness, almost tonic water-ish, floral as well, creating a very dry finish to an already dry beer; some yeasty-bready notes in the end as well. Nice for a French IPA, bit too old perhaps, but feeling very, very old-fashioned, almost like the bridge between the original English IPA and classic American West Coast IPA; could have been brewed in the United States - in the nineties or even eighties...
