Description
We are a small production brewery with a sweet little tasting area that is open on Fridays and Saturdays from 1-6 pm. We are closed on other days in order to brew or bottle. We are located in downtown Weaverville which is just 10 minutes from downtown Asheville.
We offer small pours and flights of both the beers that we have bottled as well as experimental small batches available only at the brewery. Chilled bottles are available for enjoying on or off premise as well.
The name Zebulon was chosen because it just sounds awesome, and it starts with a Z which is always cool. There is the famous explorer Zebulon Pike, and of course the USS Zebulon from Star Trek! We just think it sounds bad ass.

On tap @Zebulon while Wally ignores me to look for patron's dropping food. Dark, raisin-y, dark brown on not quite black, small lather. Candied, mildly fruity, caked, delicious nose. Smooth, silky feel. Savory ginger cookies & fruit cake spices. Touch of honey & fresh banana. Bit of warmth. Mellow carbonation keeping things from getting sticky. Cleaner yeast than a normal quad, which works for me Really great.

On tap @Zebulon but just labeled blueberry sour, 5.4%. Clear, rose-y copper pour with a skim-y head. Macerated & caramelized grape juice smell. Half twang, medium acid, lots of blueberry skin, lime, tannic dry finish. Half-sour, a touch of burnt white sugar. Not enough nuance. Better than pedestrian but still very approachable. Medium carb, a little frothy. Wife approved. Liked.

On tap @Zebulon. Dark brown on black, wispy head. Medium roast coffee, black cake, very slight fruitiness. Mild coffee, wood ash, burnt sugar, aged hops, calcium. Ashy texture, slightly milky feel, strong forced carbonation. Good but I think Whaley Farms down the road had a slightly better swing at this.

750ml bottle pours out dark brown almost black topped with a tan head. Nose is smoke ash some wood notes and a little meat. Taste is more of the nice smoke wood meat notes. Not as bad as I was expecting.

750ml bottle, 2015 vintage. Dark brown pour, thin foamy beige head. Aroma is roasty with smoky notes, coffee, chocolate. taste follows with more roasty, ashy flavors, chocoolate and coffee. Body seemed a bit thin. Cigarettes and beer.

Shared by explosivedog: pours pinkish with white head. Aroma is loads of berries... slightly funky. Taste is lightly sweet, sort of sour, lightly fruity. Quite good.

Bottle, at share, thanks to me. Pours pinkish orange. Raspberry, tart, acid, blueberry, boysenberry, really quite sour. Nice spritz. Good.

On tap at the brewery. Cloudy orange with medium white head. Hoppy, fruity, some caramel, malty backbone, citrus, nice bitter finish. Medium bodied.

Cask at the brewery. Beautiful dark copper colour with nice thick, firm, lasting head. Malty, some fruity notes, biscuit, very smooth and easy drinkable. Nice moderate bitter finish. One of the best examples of the style.
