Description
We are a small production brewery with a sweet little tasting area that is open on Fridays and Saturdays from 1-6 pm. We are closed on other days in order to brew or bottle. We are located in downtown Weaverville which is just 10 minutes from downtown Asheville.

We offer small pours and flights of both the beers that we have bottled as well as experimental small batches available only at the brewery. Chilled bottles are available for enjoying on or off premise as well.

The name Zebulon was chosen because it just sounds awesome, and it starts with a Z which is always cool. There is the famous explorer Zebulon Pike, and of course the USS Zebulon from Star Trek! We just think it sounds bad ass.

Bottle shared at Chapel Hill tasting: Poured a ruby red to maroon with a pinkish white head. Aroma is funky blueberry, pungent, fruity. Taste is acid, tart, blueberry, burns in the finish.

Bottle shared by SaltyGrog at the Chapel Hill tasting: Poured a murky yellow color with a white lacing head. Aroma is coriander, barnyard, straw, and funky. Taste is grain, yeasty, coriander, bitter.

Medium hazy, soapy, languishing brew.
Soapy, lemon, phenolic nose.
Super soapy, astringent greens, lingering citrus rind, herbaceous & mostly dry.

Kinda good.

Glass mug at Sam's place, weak head. We blame George.

Clear, russet-y, dark amber pour with a gentle pinkish cascade.
Twangy, dry, berry skin, Skittle nose.
Acidic, aecitic, heavy vitamin dust, sour plums, baby powder, lingering yeast, kinda too dry.
Crispy, thin, a touch sharp, ending dry, good but could be better.

Dark iced tea, clear, milky, lingering dirty head.
Chimney smoke, dry grain, not a big nose.
Dry maple smoke on the front, beef, very subtle prickly fruit, cola, oats, mellow char, added black malt gives it a little hair. Irritating, peppery hops on the backwash are really nice.
Frothy, very acidic, thin, easy, super sessionable.

Dark brown cola, lingering lace.
Gentle & sweet citrus & floral nose that isn't obviously tangerine.
Mild astringency, not obvious at first but becomes juicy with a little warmth. Bright citrus pith, approachable bitterness, a lot of blackened malt near the tail. Zesty tangerine on the finish that lingers.

Interesting but the OG is probably better.

Dull dirt brown with some tea highlights, weak oat head.
Very mild floral, weak mold, dirt, gentle black malt.
Acidy, dirt, faint phenols, battery, super thin, earthy finish, veggie sharp hops on the tail.
Fizzy, acidy, thin, slight chalk.

Dark matte, oily dirt brown. Lingering oatmeal head.
Sharp dark berry nose, apricot, obvious floral brett.
Medium twang, dry floral, earth, zesty citrus pith, black tea, lingering added dark malt that muddles things a bit.

Having had this before, this is another one where the OG is probably better. Still kinda great.

Off-black to inky black. Weak oatmeal head just there for the hors d'oeuvres.
Sooty, strong acid, everlasting char, middling veggie hops, dusty trail, bakers chocolate. One dimensional hops.
Dense, great acid, middle low but consist carb, dusty feel, okay satisfaction.

Decent.
