Description
We are a small production brewery with a sweet little tasting area that is open on Fridays and Saturdays from 1-6 pm. We are closed on other days in order to brew or bottle. We are located in downtown Weaverville which is just 10 minutes from downtown Asheville.

We offer small pours and flights of both the beers that we have bottled as well as experimental small batches available only at the brewery. Chilled bottles are available for enjoying on or off premise as well.

The name Zebulon was chosen because it just sounds awesome, and it starts with a Z which is always cool. There is the famous explorer Zebulon Pike, and of course the USS Zebulon from Star Trek! We just think it sounds bad ass.

At Zebulon with the wife & her book in tow.

Matte, oily brow/black over clear black tea with a sticky oatmeal head.
Serious citrus & industrial dank.
Damn, crazy bold C hops, extra black tea & intense grapefruit with a second note of tart & charred veggie & hop oil. Super bold ruby red bittersweet, big lemon-tea acid, with a backend of added black malt char for Ozzy.
Thin, crispy, astringent, somewhat tart, very bright endtrails of all already endured.

Panda at home, thanks to SHIG, 19/10/24. Moderately hazed orange amber topped with a just off white cap that thins to a swirl. Nose is yeast esters, straw, herb, bergamot, orange peel, lemon rind. Taste comprises orange zest, hedgerow, light white peppery spice, bergamot, grains, straw, subtle yeast esters, lemon rind. Medium bodied, fine carbonation, semi drying close. Solid well balanced saison.

Bottle from Appalachian. Can't remember the date but most of these are one-offs. I thought I was buying the OG saison, which is incredible but this one got close. Bottle at Shig's cider tasting, just to cut the fat a little. Everlasting frothy, pale gold pour Heavy vinous, pale citrus nose, very very quiet blanket. Bittersweet, soapy, grapefruit forward, lingering sweet grain. Frothy, good acid, sloshable. Great great beer.

Bottle thanks to MicroGrog: Poured a straw yellow with a huge white head. Aroma is lemon, citrus, coriander, funky barnyard. Taste is bitter forward, citrus, lemon, tangy, yeasty, funky. peppery.

On tap @Zebulon; 11.2%. Black, greasy/shiny, brown butter sticky head. Floral, very savory, beef stock, rich bread, wood smoke, very direct, zero phenols on the nose. Medium charred crust, burnt meat, super oily, slippery texture, lots of burnt brown sugar, burnt milk, bittersweet & drying finish; Fabulous texture. Love.

Bottle pour at the brewery; $8. Slight haze, glossy, not exactly clear. Beautiful, voluminous bleached head. Scent is pale Belgian phenols, on the mild end, fruitier than the baseline. Taste is sulfited dry tropical fruit & dry strawberry cake, dusty wheat & a minerally swirl. Smooth texture. Bolder flavors than the Eurisko version had recently, but that one had a little more acidity & sessionable nature. Not super fond of this style but both my wife & I liked this one.

Short pour @Zebulon. Clear, dark maple pour, weak head. Long smoked beef fat. Super dense & sticky nose. It's heavier & not as salivating as a bbq pig over oak. Taste is savory beef smoke with a bit of floral, medium sweet toast edging dry, sharpness at the end. Strong forced carb, just enough abv, a touch thin. Tasty.

Not the same as Hause pils. On tap @Zebulon on a sunny afternoon with the wife. Clear, golden pour with a stiff, bleached head. Mix of stiff & slightly gamey hops on the nose. Taste is pedestrian friendly, super dry cracker & herbal steel hop bite with a touch of caramel on the tail. Super sessionable. Liked.

Names as is, on tap @Zebulon. Clear, dark cola, filmy head. Dusty, black pepper, crust with a touch of spice. Way drier than I was expecting. Toasty crust, a slightly floral honey, zero yeast panache. Strong force carb, slight acidity, thin-ish. Drinks like a plain, if heartier, dark lager. Still good.
