We started out in 1996 as a small group of San Diego home brewers who simply wanted to make a better beer. In our exploration, we became obsessed with ingredients—tinkering, testing and tasting to find the perfect balance of taste and aroma. That adventurous spirit leads to award-winning beers in classic and unique styles while challenging our own tastes and expanding yours.

From bottle, Papsoes blindtasting #35. Pours dark brown to black with a small chocolate brown to tan head. High carbonation mouthfeel. Sweet chocolate and mild roasted malt aroma. Light vegetable and yeasty too. Subdued sweet, light acidic and chocolate malt flavoured. Light bitter and light roasted chocolate malt flavoured finish.

Bottled. A pitch black beer with lazing brown head. The aroma is sweet with strong notes of roasted malt and alcohol. And so is the flavor added some chocolate - a bit like warm chocolate served at 10 degrees C - nice.

(Bottle at Hilpeä Hauki, Helsinki, on 2009-04-24) Almost black. Quite quickly disappearing, medium sized and lightly tan coloured head. Metallicness and liquorice in aroma. Medium bodied and dry palate with medium carbonation. Roastedness, ash, coffee, bitterness, liquorice and hint of chocolate in taste. Ash and bitterness in aftertaste.

(Bottle at Hilpeä Hauki, Helsinki, on 2009-04-24) Dark amber and almost clear. Small white head. Grassy, fruity and malty aroma. Full bodied and dry palate with medium carbonation. Hops, malts, grass, fruitiness, little bit of molasses and bitterness in taste. Malty and lightly bitter aftertaste.

Courtesy of kiefdog. Pours deep darkness with thin tan head. The aroma is charred malts and coffee to go along with highly roasted malts (somewhat short of charred) and a hint of molasses. The taste begins as a sweet malty caramel pulse and quickly moving into charred malts and coffee. Toward midway a tasty note of vanilla surfaces to join the roasted to burnt notes. Yummy brew, I didn’t notice the ABV at all.

courtesy of kiefdog Pours dark brown Aroma plenty of coffee, roasted malts. Taste, vanilla is present but doesn’t overwhelm the taste, some roasted malts, coffee, light touch of chocolate. This is some fine tasty beer. Highly drinkable at 10 abv.

Bottle thanks to bu11zeye. Pours with a small off-white head fading over a clear golden body. Aroma is fruity with acetaldehyde. Taste is light hops and caramel. Light bubbles and a dry mouthfeel.

Pours black into a snifter. Mocha head conglomerates as it slowly recedes leaving spider lacing. Dry cocoa, oxiginated vanilla and soy aromas. Upfront creamy vanilla alcohol. Turning to milk chocolate and sour espresso and soy in the finish. A tad thin.

courtesy of Alen @ Premier Stainless. Pours maber with beige head.Aroma lots of hops, some licorice becoming apparent and caramel malts. Taste, lots and lots of hops, alcohol well present, some sweet candi with some interesting liquorish mouthfeel.

Pour is a cloudy orange with a small white head. Aroma is pure hop juice. Flavor is lots of hop resin with a subtle bitterness after the first sip. The hoppyness is almost to the point of being a double IPA without the high alcohol. Its a typical west coast IPA and that make me a happy boy.
