Fermentor of ice ciders, aperitifs, and naturally sparkling ciders from locally grown heirloom and cider varieties.
Our mission is to support small local orchards who grow special apple varieties using environmentally sustainable practices. Together we grow a fascinating array of varieties to use in our ciders – old New England heirlooms like Blue Pearmain and Roxbury Russet, iconic sweets and sharps like Hudson’s Gem and Esopus Spitzenburg, zingy crabapples like Dolgo, Kerr and Wickson, and historic tannic varieties, including bittersweet and bittersharp varieties that originated in France and England. We press once per year after harvest, using the natural winter cold at our farm to concentrate the flavors and sugars of the apples before fermentation. We don’t use sugar, colorings, acids, or industrial flavorings, and all of our ciders are naturally gluten-free and vegan friendly. Welcome to cider from a wine point of view!

26/8/2019. Sample courtesy of danlo, cheers Ed! Pours clear mid-gold with minimal head. Aroma of caramel, vanilla, moderately sweet apples and light wood. Medium sweetness and light tartness. Medium body, sticky texture, soft carbonation. Sweet toffee finish contrasting nicely with a lingering tartness.

Bottle 375ml. corked - clear glass @ [ Tasting ] - fonefan & Brugmansia House.[ As Eden Barrel Aged Northern Spy (2014) ].Clear medium amber colour with virtually no head. Aroma is moderate to heavy apple, apple pie, barrel, oak, apples - rich apple, concentrated apples. Flavor is moderate to heavy sweet and light light acidic with a long duration, apple, apple pie, concentrated apples, medium dry, barrel - oak, rich apples, barrel - vanilla. Body is medium to full, texture is creamy - thin syrupy, carbonation is flat, finish feel is warming and light alcoholic. [20190817] 8-2-9-5-18

750ml bottle from Scrattings. 7.5%. Batch: 2017. Golden colour, no lasting head and aroma of butter, apple pie, woody oak, vanilla. Taste is tart, apple, mellow, with wood, oak, vanilla notes, then citric, white wine, plus some soft tannin. Medium bodied, low carbonation, dry citric finish. Well balanced, nicely drinkable.

75cl bottle from National Brewery Centre, Burton on Trent. Pours hazy straw gold. Fresh fruity nose, crisp bright clarity of flavours, fairly dry with excellent fleshy sweet apple fruit gliding through, some orchard must, light funk with a gentle acidity. Very good.

Oops...never rated? Holy Schnikies. Pours a dark caramel brown, no head, little bit of alcohol legs. Smells like baked apple, pears, cherry, banana and zucchini bread. Always a treat to sip this. coats the tongue with vanilla, apple desserts and brown sugar. Goes down smooth. Perfect in small quantities.

750ml bottle from Scrattings. Cider rating #1500. Sparkling, golden colour with a short-lived fizzy white foam head and aroma of fruity apple, floral, caramel. Taste is tangy, floral fruity apple, red apple, woody, some tartness, caramel notes and acidity. Medium bodied, spritzy carbonation, dry acidic finish. Nicely drinkable

Light sweetness and medium tartness with a light salty edge. Moderate body, slight oily texture, average carbonation. Nice sour finish. Enjoyed this.
